Brunswick Stew

"Brunswick stew is a tomato-based stew made with vegetables, chicken, and pork. The exact origin of the stew is disputed. Brunswick County in Virginia and the city of Brunswick, Georgia both claim it was developed there.

Quick Brunswick Stew – a classic southern dish that is ready in 20 minutes! Pulled pork, chicken, lima beans, corn, chicken broth, BBQ sauce, tomato sauce – throw everything in the pot, bring to a boil and simmer for a few minutes. SO delicious! We made this two weeks in a row. We couldn’t get enough of it! YUM!"

Brunswick Stew brings back such fond memories of The Captain.  Before he moved to Florida to be with me, he lived in North Carolina and would come down to visit me.  One of those times, he brought back Brunswick Stew from his favorite restaurant that he always told me about.  It was delicious and I have thought about it, but could not remember what was in it.  I just knew I loved it and I'm so happy Stephanie posted it to her website, Plain Chicken!
