Air Fryer Roasted Potatoes

I haven't tried this recipe yet, but the next time I make potatoes, this is the method I will use since I love my air fryer.  I usually cut the time of cooking potatoes by cutting them up and placing in the microwave for about 8 minutes.  Then use whatever method to make them crispy.  I will try this first since I don't want to wait even 20 minutes.  Update on the way!

When I cook, I like to do it in different tasks.  It always starts with prepping the vegetables and setting them aside for the next cooking session.  But the exception is always potatoes.  After reading this article, I don't have to make them an exception.

If I could only choose one food and only one that I could have every day, day and night, I would choose potatoes . . . my ultimate comfort food.

Yes, I really could make a meal out of just potatoes, especially baked potato topped with chili and cheese.  The possibilities are endless!

Fried Potatoes And Onions

My version of this recipe follows.


Yes, I have my own fried potatoes and onions version of this recipe that is very similar with a few differences.  Please note, I do not measure anything and don't put a strict time on anything.  It is all taste and season as you cook with your preferred seasonings.  Personally, I season with garlic powder and very little salt.  I cook on medium heat, adjust as necessary and don't leave it unattended.

1.  Cut potatoes in bite sized pieces and cook them with a little butter in the microwave for about 6 or 7 minutes.  I don't always peel the potatoes, but sometimes I do.

2. While potatoes are cooking, peel and slice onion.  

3. A twist to my recipe . . . slice mushrooms, whatever type you like.  Leave it out if you don't like them.  Sometimes I add green pepper or poblano pepper to make it extra special.

4. Sauté and caramelize the onions and mushrooms in butter.

5.  After potatoes have cooked until almost tender in the microwave, add to the caramelizing onions and mushrooms.  Add more butter if necessary.

6.  Sauté on medium heat until the potatoes are browned and crispy.  I can't really say how long this takes.  Stir often and nurture it, you don't want it to burn.  Don't walk away from it either.

I hope that made sense!  This has been the method I've used since I was a teenager.  Potatoes are one of my favorite foods.

Looks delicious!  I must admit, there isn't a potato recipe that I don't like.  It is possibly my favorite food group.  And this recipe, it looks like it is more crispy than creamy, which is fine with me.  There is a place for both.

Cheesy Garlic Smashed Potatoes

These potatoes are something I could eat every day.  My method for making these type of potatoes is to cook little potatoes (with holes poked in them) in the microwave with butter.  Microwave for 6 minutes.  Take out and cover with cheddar cheese.  This recipe gave me the idea to use garlic powder too.  Also, I may try to make them in the air fryer to achieve the crispiness.

Frico with Potatoes and Montasio Cheese

This recipe comes from Lidia on Create TV.  We just watched the program that featured this frico and it looked so delicious that we had to find the recipe.

It is one of those versatile recipes that you can add whatever ingredients your family loves.  I would definitely add mushrooms!

Grilled Three Cheese Potatoes

Chive and Onion Hash Browns



This hash brown casserole sounds and looks seriously delicious!




Ingredients

1-1/2 cups half-and-half cream
1 container (8 ounces) spreadable chive and onion cream cheese
2 tablespoons dried minced onion
1 teaspoon salt
1/2 teaspoon pepper
2 packages (20 ounces each) refrigerated shredded hash brown potatoes
2 cups shredded Swiss cheese
3 tablespoons minced fresh chives, divided
2 tablespoons butter, cubed



Directions

Preheat oven to 375°. 

Combine the first five ingredients in a Dutch oven, cook and stir over medium heat until blended. Stir in potatoes.

Grease a 13x9-in. or 3-qt. baking dish.  

Layer 1/3 of the hash brown mixture and 2/3 cup Swiss cheese and sprinkle with 1 tablespoon chives. Repeat layers. 

Top with remaining hash brown mixture and cheese; dot with butter.
Bake, covered for 35 minutes. 

Bake, uncovered for 10-20 minutes longer or until edges begin to brown and potatoes are heated through. 

Let stand 10 minutes before serving. Sprinkle with remaining chives. 


Yield: 12 servings (3/4 cup each)
