Raspberry Lemonade Cheesecake Bars




A delicious looking cheesecake bars recipe from Betty Crocker!







Ingredients

Crust

1 pouch Betty Crocker™ sugar cookie mix
1/2 cup butter, softened 
1 egg 
1 teaspoon finely grated lemon peel

Filling
2 packages (8 oz each) cream cheese, softened 
1/2 cup sugar 
1 tablespoon finely grated lemon peel
2 eggs 
1/3 cup fresh lemon juice
1 cup fresh raspberries




Directions

Heat oven to 325°F. 

Spray bottom only of 13 x 9-inch pan with cooking spray.

Mix crust ingredients with spoon until soft dough forms in a large bowl. 

Press dough in bottom of pan. 

Bake 15 minutes. 

Remove from oven to cooling rack and cool 10 minutes.

Beat cream cheese, sugar and 1 tablespoon lemon peel with electric mixer on medium speed until smooth. Scrape sides of bowl frequently. 

Add eggs, one at a time and beat until just blended. 

Beat in lemon juice. 

Reserve 1/4 cup filling and set aside. 

Spread remaining filling over cooled crust.
Mash raspberries with fork.  Push mixture through small strainer with back of spoon to make 1/4 cup raspberry puree. 

Stir puree into reserved filling. 

Drop spoonfuls of raspberry mixture on cream cheese layer. 

Carefully swirl into top of cream cheese layer with a knife.

Bake 30 to 35 minutes or until filling is set. 

Cool 30 minutes on cooling rack. 

Refrigerate about 2 hours or until cooled completely. 

Cut in 6 rows by 4 rows.

Pineapple Cheesecake Dessert



Here's a recipe that you can go to for quick and easy.  The only real time is waiting for it to chill and firm up in the refrigerator.

The recipe and photo come from the Kraft Foods website.

If it's got cream cheese, it's got to be good!




Ingredients

2 cups BAKER'S ANGEL FLAKE Coconut
1/2 cup finely chopped PLANTERS Pecans
3 Tbsp. flour
3 Tbsp. butter or margarine, melted
1 env. (1/4 oz.) KNOX Unflavored Gelatine
1/4 cup cold water
3 tubs (8 oz. each) PHILADELPHIA Cream Cheese Spread
1/2 cup sugar
1 can (20 oz.) crushed pineapple in juice, drained with 1/2 cup juice reserved
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed



Directions

Heat oven to 350°F.

Combine coconut, nuts, flour and butter; press onto bottom of 13x9-inch baking dish. Bake 15 min.

Meanwhile, sprinkle gelatine over water in small saucepan; let stand 1 min. Cook on low heat 5 min. or until gelatin is completely dissolved, stirring occasionally.

Beat cream cheese spread and sugar in large bowl with mixer until blended. Gradually beat in gelatine and reserved pineapple juice. Gently stir in pineapple and COOL WHIP; pour over crust. Refrigerate 3 hours or until firm.

Delicious Lemon Cheesecake Pie


If you love cheesecake and lemons, you will love this pie!

For The Captain and I, it is a keeper.  The filling was slightly tart, slightly sweet with a creamy texture and so delicious.  Topping with whipped cream before serving is like icing on a cake.  I would not have it any other way!

The recipe is adapted from the website Real Simple . . . the photo is from Real Simple.  It shows a pre-made crust, but I wanted a graham cracker crust to make it more like a cheesecake.  Great choice!



Ingredients:

    • Graham Cracker Crust
    • 2-8 oz bars cream cheese (softened)
    • 1 cup sugar
    • 1 cup sour cream
    • 2 large eggs
    • 1/3 cup fresh squeezed lemon juice
    • 1 tsp vanilla
    • 1/4 tsp salt
    • whipped cream



Directions:

Combine all ingredients until smooth and pour into crust.

Bake at 325 degrees 40 to 50 minutes (filling will be set, but a bit wobbly).

Before serving, top with a layer of whipped cream.

Dark Chocolate Ganache Cheesecake



There is something about ending a meal with a cheesecake that makes it special.  My specialty is baking and cheesecakes are my favorite dessert to make . . . I think I missed my calling to be a pastry chef!  Needless to say, I have made my share of a variety of cheesecakes.  

My favorite source for my cheesecake recipes is my old Philadelphia Cream Cheese cookbook that I have had since I was a very young adult.  Although I still refer to that old cookbook, one of my favorite food websites is Philadelphia Cream Cheese.

This cheesecake is one of the most beautiful cheesecakes I have seen . . . I will be making this on the next special occasion that comes up!



Ingredients

1-1/2 cups graham cracker crumbs
3 Tbsp. sugar
1/3 cup butter or margarine, melted
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 cup sugar
1 tsp. vanilla
4 eggs
1 tub (8 oz.) COOL WHIP Whipped Topping (Do not thaw.)
6 oz. BAKER'S Bittersweet Chocolate
1 cup fresh raspberries



Directions

Heat oven to 325°F.


Mix graham crumbs, 3 Tbsp. sugar and butter; press onto bottom of 9-inch springform pan.

Beat cream cheese, 1 cup sugar and vanilla with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.

Bake 55 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate cheesecake 4 hours.

Microwave COOL WHIP and chocolate in microwaveable bowl on HIGH 2 to 2-1/2 min. or until chocolate is completely melted and mixture is well blended, stirring after each minute. 

Cool 15 min.; slowly pour over cheesecake. Garnish with raspberries.

Butter Pecan Cheesecake



One of my favorite ice cream flavors is rich and buttery butter pecan . . . I can imagine a cheesecake with that awesome flavor!

This cheesecake, which comes from Taste of Home, is a strong contender for our holiday dessert table this year.  We just might make it before the holidays!

Let me know if you try it out!





Ingredients

1-1/2 cups graham cracker crumbs
1/2 cup finely chopped pecans
1/3 cup sugar
1/3 cup butter, melted


FILLING:

3 packages (8 ounces each) cream cheese, softened
1-1/2 cups sugar
2 cups (16 ounces) sour cream
1 teaspoon McCormick® Pure Vanilla Extract
1/2 teaspoon butter flavoring
3 eggs, lightly beaten
1 cup finely chopped pecans



Directions

Combine the cracker crumbs, pecans, sugar and butter 
in a large bowl.  

Set aside 1/3 cup for topping. 

Press remaining crumb mixture onto the bottom and 1 in. up the sides of a greased 9-in. springform pan.

Place springform pan on a double thickness of heavy-duty foil and securely wrap foil around pan.

Beat cream cheese and sugar until smooth 
in a large bowl

Beat in the sour cream, vanilla and butter flavoring. 

Add eggs, beating on low speed until combined. Fold in pecans. 

Pour into crust and sprinkle with reserved crumb mixture. 

Place springform pan in a large baking pan; add 1 in. of hot water to larger pan (I've never done this step when making cheesecake).

Bake at 325° for 70-80 minutes or until center is almost set. 

Remove springform pan from water bath. 

Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen.  Cool 1 hour longer. 

Refrigerate overnight. Remove sides of pan. 

Yield: 16 servings.

Snickerdoodle Cheesecake With Caramel Sauce




What a great combination!  If you love and snickerdoodles and cheesecake too, this dessert is for you.

The recipe comes from Sandra Lee of the Food Network Channel.  Her food creations are always a delicious treat!  If you have not checked out her website, the link appears at the end of the recipe.





Makes: 10 servings


Ingredients


    • Cooking spray 
    • 1 package (21 ounces) snickerdoodle cookie mix with spice packet 
    • 8 tablespoons (1 stick) butter, melted 
    • 2 packages (8 ounces each) cream cheese, at room temperature 
    • 1⁄4 cup packed light brown sugar 
    • 3 eggs 
    • 3⁄4 cup caramel topping 
    • 3/4 teaspoon cinnamon extract 


Directions

Preheat oven to 350°F. 


Spray a 9-inch springform pan with cooking spray.

Using a large bowl, combine cookie mix, half of the spice packet from the mix, and the butter. Stir until mixture comes together. Press mixture into bottom of springform pan and 2 inches up sides.  

Using a large bowl, beat together cream cheese, brown sugar, and remaining spice from packet. Add eggs, 1 at a time, beating well after each addition. 

Pour into the springform pan over the cookie crust.

Bake for 40 to 45 minutes, or until set with a soft-looking center. Cool in pan on a wire rack.

Using a small saucepan, heat caramel topping over medium-high heat until boiling. Reduce heat to medium-low and simmer until mixture thickens (about 5 minutes). 

Remove from heat and stir in cinnamon extract.

Cool to room temperature.


Cut cooled cheesecake into wedges (still in the springform pan). Pour cooled caramel mixture over cheesecake. 

Chill in refrigerator for at least 2 hours before serving. 

Remove sides of springform pan and transfer wedges to a platter.

Dulce de Leche Swirl Cheesecake



Cheesecake recipes always get my attention!

This recipe comes from Martha White.  I've never been disappointed with any of their recipes that are on the packages of flour, cornmeal, etc.  In fact, some of them have been in my collection since I was a teenager. Check out their website for awesome recipes!




Ingredients


Crust

    • 2 (7 oz.) packages Martha White® Apple Cider Flavored Muffin Mix, or Cinnamon Sugar Muffin Mix
    • 1/2 cup very soft butter


Filling

    • 3 (8 oz.) packages Neufchatel or 1/3 less fat cream cheese, softened
    • 1/2 cup sugar
    • 3 large eggs
    • 2/3 cup Smucker's® Caramel Flavored Topping


Directions

HEAT oven to 325ºF. 

SPRAY bottom of 9-inch springform pan with no-stick cooking spray.

For crust: BEAT muffin mix and butter on low speed of electric mixer until a dough forms. Press mixture into the bottom of the prepared pan.

For filling: BEAT cream cheese and sugar in medium bowl on low speed of electric mixer for about one minute. Add the eggs and mix until well-combined.

SPREAD cream cheese mixture evenly over crust. Pour caramel topping onto cheesecake layer. Swirl through mixture with knife several times for a marbled design.

BAKE for 45 to 55 minutes or until center is set and edges are light brown. Cool for 45 minutes at room temperature. 

Chill overnight or at least 3 hours before serving.

Mini Cheesecake Cookie Bites



What a cute and delicious idea!  

I didn't even know that cheesecake cups with removable bottoms existed!  Great concept for so many recipes :)

Just say cheesecake and you've got my attention!  You can't get any easier than this recipe for a last minute dessert to take to a party or just to enjoy at home.  

I've used other cheesecake recipes from Pillsbury's website and always get requests for the recipe.

Ingredients: 
    • 1/2 package Pillsbury™ Ready to Bake!™ chocolate chip cookies
    • 1 package (8 oz) cream cheese, softened
    • 1/2 cup sugar
    • 1 1/2 cups whipped cream topping (from aerosol can)
    • 1/2 cup semisweet chocolate chips
    • 1 tablespoon coconut oil

Directions:

Heat oven to 350°F. 

Remove 12 dough rounds from cookie dough package; save remaining dough for a later use. 

Place 1 dough round in each of 12 mini cheesecake cups with removable bottoms.
Bake 14 minutes. Cool completely, about 15 minutes.

Meanwhile, in medium bowl, beat cream cheese and sugar with electric mixer on medium to high speed 3 to 4 minutes until smooth. 

Using rubber spatula, gently fold in whipped cream topping.
Gently spoon or pour cream cheese mixture over each cooled cookie until cup is full; smooth top until flat. Freeze at least 3 hours to set.
Just before removing cheesecakes from freezer, place chocolate chips and coconut oil in microwavable bowl. 

Microwave on High in increments of 20 seconds until chocolate is completely melted. Beat mixture with whisk until smooth.
Once cheesecakes are firm, remove pan from freezer. Gently release cheesecakes from cups. Remove cup bottoms from cheesecakes; place on cooling rack. 

Decoratively drizzle melted chocolate over tops of cheesecakes. 

Let stand 2 to 3 minutes to set before serving.

Chocolate Cheesecake Bars



Quick, easy, delicious . . . my kind of recipe!

Ingredients


    • 1 can Pillsbury™ Crescent Recipe Creations™ refrigerated seamless dough sheet
    • 2 packages (8 oz each) cream cheese, softened
    • 1 cup sugar
    • 2 eggs
    • 1 cup semisweet chocolate chips
    • 1/4 cup caramel topping, if desired



Directions

Heat oven to 375° F. Grease 13x9-inch pan with shortening or cooking spray.

Unroll dough, and press in bottom and 1/2 inch up sides of pan.

In medium bowl, beat cream cheese, sugar and eggs with electric mixer on medium speed until smooth. Fold in chocolate chips.

Spread filling over crust.

Bake 25 to 30 minutes or until edges are set and firm to touch.

Cool 1 hour on cooling rack.

Refrigerate 1 to 2 hours to set.

Cut into 6 rows by 4 rows.

Serve drizzled with caramel.

Store covered in refrigerator.

Oreo Cheesecake



Who doesn't love Oreo cookies?  Oreos and cheesecake are a match made in heaven.  My favorite cheesecake recipe has an Oreo cookie crust . . . actually in my opinion, they make the best crust for cheesecake.

What I love about this recipe are the possibilities to make it lighter by using no fat cream cheese and no fat Cool Whip.  

The recipe and photo comes from the Taste of Home website, although it is officially a Philadelphia Cream Cheese recipe.  If you love cookbooks, Taste of Home has the best annual cookbooks and one of the favorite cookbooks is from Philadelphia Cream Cheese that I have had for more years than I care to mention.




Ingredients
    • 36 OREO® Cookies, divided
    • 1/4 cup butter, melted
    • 4 packages (8 ounces each)PHILADELPHIA® Cream Cheese, softened
    • 3/4 cup sugar
    • 1 teaspoon vanilla extract
    • 1 tub (8 ounces) COOL WHIP® Whipped Topping, thawed

Directions

CHOP 15 cookies coarsely. 

Finely crush remaining cookies; mix with butter. Press onto bottom of 13x9-inch pan. Refrigerate while preparing filling.

BEAT cream cheese, sugar and vanilla in large bowl with mixer until blended. Gently stir in COOL WHIP and chopped cookies; spread onto crust.

REFRIGERATE 4 hours or until firm. Yield: 16 servings.


HOW TO EASILY REMOVE CHEESECAKE FROM A PAN TO SERVE: 
Line pan with foil, with ends of foil extending over sides before using to prepare cheesecake as directed. Use foil handles to lift chilled cheesecake from pan before cutting to serve.

Golden Caramel Cheesecake Bars



Two of my favorite things . . . cheesecake and caramel . . . these cheesecake bars have got to be awesome with that combination!

The recipe is courtesy of Philadelphia Cream Cheese.

If you want to attempt to make a lighter version, Philadelphia Cream Cheese with no fat is a great substitute. I'm very picky about "no fat" items and it passed my test.





Ingredients:

    • 24 Golden OREO Cookies, divided
    • 2 Tbsp. butter or margarine, melted
    • 25 KRAFT Caramels (1/2 of 14-oz. bag)
    • 1 Tbsp. water
    • 2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
    • 1 jar (7 oz.) JET-PUFFED Marshmallow Creme
    • 1 egg

Instructions:
PREHEAT oven to 350°F. Place 14 of the cookies in food processor container; cover. Process until finely crushed. Mix with butter; press firmly onto bottom of 9-inch square baking pan. Bake 10 min. or until golden brown. Cool 10 min.

PLACE caramels and water in microwaveable bowl. Microwave on HIGH 1 min. or until caramels are completely melted, stirring every 30 sec. Set aside. Coarsely chop remaining 10 cookies. Beat cream cheese and marshmallow creme in large bowl with electric mixer on medium speed until well blended. Add egg; mix well. Stir in chopped cookies; pour over crust. Drop spoonfuls of the caramel mixture over batter; swirl gently with knife for marble effect.

BAKE 20 to 25 min. or until center is set. Cool completely. Refrigerate 4 hours or overnight. Cut into 20 bars. Store in tightly covered container in refrigerator.

Blackberry Cheesecake Squares



When it is any type of cheesecake, it gets my attention.  

I saw Ree make this cheesecake on The Pioneer Woman this afternoon and what I loved best (besides it being cheesecake) is the crust.  Vanilla wafers and pecans sounds like a delicious crust that I'd like to try out real soon.

Ingredients

Crust:

    • Cooking spray, for spraying foil
    • One 11-ounce box vanilla wafers
    • 1/2 cup pecans
    • 1 stick (1/2 cup) butter, melted

Filling:

    • Three 8-ounce packages cream cheese
    • 1 1/2 cups sugar
    • 1 1/2 teaspoons vanilla
    • 4 eggs
    • 1/2 cup sour cream

Topping:

    • 4 cups blackberries
    • 1 cup sugar
    • 1 tablespoon cornstarch




Directions

Preheat the oven to 350 degrees F.

For the crust: Line a 9-by-13-inch rectangular baking pan with foil and spray with cooking spray.

Place the vanilla wafers and pecans into the bowl of a food processor and pulse until the mixture becomes crumbs. Add the melted butter and pulse again until combined. Pour the mixture into the prepared pan and press the crumbs into the bottom of the pan. (If they come up the sides, that's okay!)

For the filling: Beat the cream cheese, sugar and vanilla together in a medium bowl with an electric mixer until smooth. Add the eggs one at a time, beating after each addition. Add the sour cream and mix again.

Pour the filling into the crust, smooth the top and bake for 50 minutes. Turn off the oven, open the oven door and allow the pan to sit in the open oven for 15 minutes. Remove and set aside to cool.

For the topping: Add the blackberries, sugar and 1/4 cup water to a saucepan or skillet. Bring to a boil over medium-high heat and cook until the juices thicken slightly, 4 to 5 minutes.

In a small bowl, make a slurry by stirring together the cornstarch and 2 tablespoons water until smooth. Add the slurry to the berries, return to the boil and cook for another 1 to 2 minutes. Turn off the heat and cool the mixture.

Pour the blackberries over the cheesecake and place the pan into the fridge to cool and set for at least 2 hours (several hours is better).

When ready to serve, remove the cheesecake from the pan by lifting the edges of the foil. Slice into 15 pieces with a long serrated knife.

Red Velvet Mini Cheesecakes


Seems like Red Velvet Cakes, Cupcakes and Cookies
 have been all the rage lately.

Here are two recipes with a twist to the Red Velvet craze . . . 
mini cheesecakes from Betty Crocker and Sally's Baking Addiction.





Ingredients

Crust

36
chocolate wafer cookies, crushed (about 1 3/4 cups)
4 1/2
tablespoons butter, melted
1
teaspoon corn syrup or honey

Filling

2
packages (8 oz each) cream cheese, softened
3/4
cup granulated sugar
2
teaspoons vanilla
2
tablespoons red food color
2
eggs
1/4
cup unsweetened baking cocoa
1/2
cup Original Bisquick® mix
3/4
cup milk

Toppings

2
cups whipping cream
2
tablespoons powdered sugar
Chocolate shavings, if desired

Directions
 
In small bowl, mix Crust ingredients. Divide crumb mixture among cups. Using fingertips, firmly press in bottom of each cup, making sure crumbs are firmly packed.
In large bowl, beat cream cheese with electric mixer on medium speed until smooth. Gradually beat in granulated sugar until fluffy. Beat in vanilla and food color. Beat in eggs, 1 at a time, until well blended. Add cocoa and Bisquick mix, and beat until there are no more streaks and batter looks chocolaty. Pour in milk, and beat until smooth and creamy. Divide batter evenly among cups (cups will be almost full).
Bake 30 to 35 minutes or until centers are firm. Cool 15 minutes (cheesecake centers will sink while cooling). Refrigerate in pan at least 45 minutes. In chilled small bowl, beat whipping cream on medium speed 30 seconds; gradually increase speed to high, and beat until stiff peaks form. During last minute, beat in powdered sugar.
Remove cheesecakes from refrigerator and, using butter knife, gently pop them out of pan. Carefully remove wrappers, and top each chilled cheesecake with large dollop of whipped cream and a sprinkle of chocolate shavings. Serve chilled.
The cheesecakes can be made and frozen ahead of time. Leave cheesecakes in their paper baking cups, and wrap well with plastic wrap. Freeze in airtight container. To thaw, let cakes stand in refrigerator about 2 hours or until ready to eat; top as directed.
