The Best Chicken Fried Steak

One of my favorite meals.  I need to make it myself instead of ordering Door Dash at least once a week from Cracker Barrel.  Really, as much as I love cooking, I hate cooking for one for certain meals.

This recipe sounds relatively easy to make and All Recipes has excellent instructions with photos and even a video.

Marry Me Chicken Pot Pie

This is the best chicken pot pie recipe I have seen.

Like every other chicken pot pie recipe, you can make variations to include your preferred ingredients.  I would add mushrooms and leave out the spinach.

Cheesy Chicken Noodle Casserole

Loving the chicken casseroles I have been finding.

These recipes are perfect for leftover chicken or turkey. 

Since I am now cooking for one, I rarely make chicken because it is cheaper and easier to buy a rotisserie chicken from the grocery store.  Good idea to use with this recipe.

This rechipe is one of the first I am going to try.  That gravy over mashed potatoes or rice would be perfect.  I've never used ritz crackers as a coating for the chicken, but I would love to try it out.

Rotel King Ranch Chicken

The Captain and I really loved trying out all these new chicken recipes.  The versatility of chicken is amazing! 

This recipe offers the creaminess of the cream of chicken soup with the added kick of Rotel tomato and chilies.  Love the corn tortillas and cheese added to the casserole, like a chicken lasagna.

How can you go wrong if one of the ingredients is cream of chicken soup?

Fast and easy recipe, great for beginner cooks!

What To Make With Chicken Broth

Chicken broth is one of the most important items to have in your kitchen.  

While many make homemade chicken broth, I keep a jar of Better Than Bouillon to make my own chicken stock.  Since I love shortcuts in the kitchen, I just mix it in water and have delicious chicken stock in minutes.  Click here for the Better Than Bouillon website for everything you want to know about using this awesome product that comes in many flavors.

One of my cooking tricks is to use chicken stock instead of water when making rice or pasta.  Think about all the items you make that require water and replace with chicken stock.  It brings an enhanced flavor to whatever you are making.

Air Fryer Chicken Thighs

The air fryer is what I now predominantly use since The Captain passed away and I am cooking for one.  I've adapted many of my recipes to prepare in the air fryer and will post many of these recipes.  There are many people cooking for one and using their air fryer, so I am looking for more air fryer recipes.  More recipes will be posted in the future.

Jillian at Food, Folks and Fun has posted an in depth air fryer recipe post for chicken thighs.  The article is very informative.  Thank you Jillian!  I am a subscriber to her newsletter and everyone should too!

Love Asian food!  I've never made potstickers and look forward to giving it a try.

Chicken and Stuffing Skillet



Ingredients:


1 tbsp. butter
4 skinless, boneless chicken breasts halves
1 box (6 ounces) Pepperidge Farm® One Step Stuffing Chicken Mix
1 can (10 3/4 ounces) Campbell's® Condensed Cream of Mushroom Soup (Regular, 98% Fat Free or 25% Less Sodium)
1/2 cup milk
1/2 cup shredded Cheddar cheese


Directions:
Heat the butter in a 10-inch skillet over medium-high heat. Add the chicken and cook for 15 minutes or until it's well browned on both sides and cooked through. Remove the chicken from the skillet.

Prepare the stuffing in the skillet according to the package directions except let stand for 2 minutes.

Return the chicken to the skillet. Stir the soup and milk in a small bowl. Pour the soup mixture over the chicken. Sprinkle with the cheese. Cover and cook over medium heat until the mixture is hot and the cheese is melted.

Serves 4.
