"These super delicious blondies are loaded with chocolate chips, butterscotch chips and walnuts. If one of those ingredients doesn’t sound good to you, leave it out or substitute with something else. But I think they are perfect as the recipe is written!"  Comment from Recipe Girl

They look delicious!!  I have never had a blondie, but now I want one.

Authentic Louisiana Red Beans and Rice

"Looking for a hearty rice dish with a kick? This authentic Louisiana red beans and rice is a budget-friendly recipe with incredible Cajun flavor. Andouille sausage joins garden-fresh vegetables, zesty spices, and long grain rice in this deliciously down-home recipe. Learn all about this boldly savory dish, including tips on choosing the best beans and what to serve alongside it."  Comment from All Recipes

I want to try this recipe, but I'm not sure about the Andouille sausage.  Sausage is something I am very picky about.  Maybe I could substitute with Italian sausage.  Everything else sounds delicious.

Brunswick Stew

"Brunswick stew is a tomato-based stew made with vegetables, chicken, and pork. The exact origin of the stew is disputed. Brunswick County in Virginia and the city of Brunswick, Georgia both claim it was developed there.

Quick Brunswick Stew – a classic southern dish that is ready in 20 minutes! Pulled pork, chicken, lima beans, corn, chicken broth, BBQ sauce, tomato sauce – throw everything in the pot, bring to a boil and simmer for a few minutes. SO delicious! We made this two weeks in a row. We couldn’t get enough of it! YUM!"

Comments from Plain Chicken

Brunswick Stew brings back such fond memories of The Captain.  Before he moved to Florida to be with me, he lived in North Carolina and would come down to visit me.  One of those times, he brought back Brunswick Stew from his favorite restaurant that he always told me about.  It was delicious and I have thought about it, but could not remember what was in it.  I just knew I loved it and I'm so happy Stephanie posted it to her website, Plain Chicken!

Easy Chocolate Desserts That Start With A Box Mix

"Not everyone is a baker, and that's okay. Plenty of great cooks hate making desserts, but not every dessert has to be French patisserie either. These easy chocolate recipes start with boxed mixes, which take a lot of the hard work and pitfalls out of baking. A few clever additions help bump up the flavor of these mixes and produce baked goods that are closer to homemade.

When it comes to chocolate mixes, whether cake or brownie, a chief complaint is that they're never chocolatey enough, which these recipes smartly address through extra helpings of chocolate that result in bakery-worthy sweets."  Comment from Southern Living

Although I love the process of baking from scratch, there are times when semi-homemade is appreciated.  Using a boxed mix doesn't always mean an inferior cake, but it depends on how you use additions to enhance the flavor.  This is an excellent article that not only takes you to an array of delicious cake recipes, but has tips on using box mixes.  Everything you always wanted to know about baking a cake with a boxed mix!

Fried Fish

"If you’re looking for a classic crispy, batter dipped fish recipe, this is it. The lemon pepper seasoning in the coating pairs perfectly with the accompanying recipe for creamy, tangy homemade tartar sauce."  Comment from Taste of Home

Look at that delicious looking fried fish . . . love it!!

Beer Battered Fish

"In this recipe, cold beer flavors the batter and keeps it light and crisp, thanks to the carbonation. Stick with a light-colored beer or nonalcoholic beer to create golden-brown fillets with a mild taste. Serve the fish hot with lemon wedges and a salad, or dig into pub vibes with pan fried French fries."  Comment from Taste of Home

Love fried fish and having different versions make me happy!

Crispy Beer Battered Fish

"This recipe uses cornstarch and flour in the batter to create extra-crispy fried fish. Feel free to swap in
nonalcoholic beer, as the beer’s flavor and carbonation (not the alcohol) make the batter successful."  Comment from Taste of Home

Love fried fish!

Air Fryer Fish and Chips

"Air fryer fish fillets are just as crispy as the deep fried version. The cornflake breading creates a delightfully light and crispy exterior, while the fish stays nice and moist inside.

Air fryer fish is so simple to make. Like the traditional version, air fried fish fillets feature a light, crispy batter that creates a delightful crunch with each bite. It’s a perfect contrast to the moist, flaky fish inside. The dish works well with fresh fish, or you can use frozen cod."  Comment from Taste of Home

Love fried fish and happy to have an air fryer recipe!

Tartar Sauce

"Tartar sauce is one of those things that’s just plain better when homemade. Once you make it yourself, you may never go back to the jarred version. This homemade tartar sauce is salty, creamy and just the right amount of tangy—everything you want in a condiment to serve with crispy fish or fries. With just a few ingredients, this recipe can be whipped up in minutes whenever you want a tartar sauce that tastes fresh and feels effortless."  Comment from Taste of Home

This recipe is almost the same as how I make tartar sauce.  I don't use onion.  I love tartar sauce so much that I sometimes use it instead of mayonnaise when I make cheeseburgers or even a ham sandwich.

Honey Garlic Chicken - 2 versions

There is nothing like the aroma of a meal cooking in the crock pot.  In my working days, I walked in the door from a hard day's work to the smell of a delicious meal ready to eat.  Be instantly de-stressed!

How about the combination of honey and garlic?  It is one of my favorite appetizers when I order Chinese takeout.  This chicken dish would be perfect with rice, steamed broccoli and a salad with rolls.

This year, I'm focusing on frugal cooking . . . lots of chicken. Another focus that goes along with frugal cooking is freezer cooking.  This meal would be perfect for two meals for two people . . . freeze half to enjoy another day later in the month! I love having a great selection of meals ready to go in the freezer for those busy or lazy days.

"Southerners are unapologetic about their fondness for hashbrown casserole. Also known as “Funeral Casserole,” the dish’s creamy goodness has comforted the bereaved for decades. And let's face it, no other dish on earth can transition so seamlessly from a country club breakfast buffet to a potluck church supper.  Learn how to make hashbrown casserole, and you'll discover a potato side dish your family will ask for again and again."  Comment from Southern Living

Blend of the Bayou

"This version of the creamy seafood bake calls for precooked shrimp and canned crabmeat, making it easy to prepare no matter where you live. Among all the types of shrimp available, white or brown Gulf shrimp work best at capturing the regional flavors of this juicy shrimp recipe. Blue crab comes from similar warm waters, and is often the source of sweet, tender crabmeat sold in cans."  Comment from Taste of Home

If it has shrimp and crabmeat, I want to try it!

Old Fashioned Oatmeal Bars

These oatmeal bars sound delicious and very versatile.

Copycat Panera Broccoli Cheese Soup

"Panera’s broccoli cheese soup recipe is popular for a reason. It has just the right amount of broccoli, and each creamy, cheesy bite is as comforting as the last—especially when you’ve paired it with a bread bowl to scoop out with every spoonful.

While it’s great to enjoy a bowl in the cafe, nothing beats a home-cooked meal—which is why we created a copycat Panera broccoli cheese soup recipe. Now, you don’t need to leave the house to get this restaurant favorite. It’s warm, filling comfort food that works as a lunch, appetizer or dinner—just adjust the portion size."  Comment from Taste of Home

Panera Broccoli Cheese Soup is one of the best soups I have ever had.  Very happy to have a recipe I can make at home.

Perfectly tender and easy to make, this classic recipe brings the taste of nonna's kitchen to your table!"  Comment from Savoring Italy

This recipe is much like the one I use that I learned from my nana.  I think the only difference is I don't use onion.

One Pan Parmesan Steak and Potatoes

"Busy weeknights call for easy one-pan dinners, and my Parmesan Steak and Potatoes is an absolute winner. Tender chunks of marinated steak are skewered, broiled on top of potatoes, and finished with a garlic parmesan paste, resulting in one of the most delicious steak and potato dishes you'll ever have."  Comment from Sip and Feast

Shrimp and Burst Cherry Tomato Pasta

"Two summer favorites in one: tomatoes and shrimp. Whole cherry tomatoes are cooked on the stove top until they gently burst, creating the base for an effortless sauce. A mix of both yellow and red cherry tomatoes adds contrast to this keeper of a dish, especially when the dish is finished with fresh basil. The Parmesan brings the entire dish together, blending with reserved pasta water to create a silky sauce. The key is to buy a block of Parmesan and grate it yourself, as the pre-grated kind can clump and won't melt to create a smooth sauce. Some say cheese and seafood shouldn't mix, but this recipe is a pretty compelling reason for why they go together."  Comment from Southern Living

Fast, easy and delicious . . . that is a winner!
