Lasagna Casserole

"All the traditional flavor of lasagna, with none of the fuss. We've simplified the layers in this lasagna casserole so the dish comes together more quickly.

Lasagna is already a one-dish casserole, so you might be wondering what’s new about this lasagna casserole recipe. It all boils down to prep time. A traditional lasagna can take up to an hour to prepare, which doesn’t exactly capture the ease I usually associate with casseroles. In this version, the layers are simplified to bring that prep time down to 15 minutes."  Comment from Taste of Home

Love the simplicity of using jarred sauce or the option of homemade pasta sauce.  The only thing I would substitute is ricotta for the cottage cheese.  All in a casserole is a great idea.  Love it!

Ham Ravioli Bake

"With shortcuts ingredients like leftover cooked ham, frozen cheese ravioli and jarred Alfredo sauce, this family-friendly ham ravioli bake comes together in a flash."  Comment from Taste of Home

This recipe is truly a semi-homemade meal that looks like you spent hours making.  Love that it is a great meal for using leftover ham, too.  Looks delicious!

Spicy Shrimp Fettuccine Alfredo

"Spicy Shrimp Alfredo feels like a special dish (because it is!), but with jarred Alfredo sauce it's completely obtainable for even novice cooks."  Comment from Taste of Home

I often use jarred sauce when I just don't feel like cooking sauce for hours.  Of course the sauce cooked for hours is better, but the jarred sauce is a great substitute.

There's more . . . if you want to cook it from scratch.

"Instead of buying a jar of sauce, make it from scratch for this easy shrimp Alfredo recipe. The garlic aroma will call your family to the table."  Comment from Taste of Home Test Kitchen

Love the idea of a mint flavored brownie-like cookie!  I had no idea that Andes Mint Chips exist.  What a great idea and would be a good alternative to chocolate chips or include both in a chocolate chip cookie.  Thanks to Melissa of Bless This Mess for this recipe.

Banana Bread Cake with Cream Cheese Frosting

"If there’s a single dessert that bridges the gap between “weeknight easy” and “company worthy,” it’s this Banana Bread Cake with Cream Cheese Frosting. Think: the familiar comfort of classic banana bread, but lighter, taller, and more tender like cake—finished with a cool, tangy swoop of cream cheese frosting. It’s the kind of bake that perfumes the whole house, slices cleanly for potlucks, and pairs perfectly with a mug of coffee or tea."  Comment from ajgreats.com

This Banana Bread Cake looks delicious . . . and the Cream Cheese Frosting makes it impossible for me to ignore.  I've never seen this type of cake before and I love the idea.  Would love to try it soon!

Better Than Starbucks Lemon Loaf Copycat Recipe

"Confession time: I’m not a Starbucks coffee fan. It’s strong, burnt, and just not my thing. But that lemon loaf? Swoon. Moist, bright, and perfectly sweet-tart. When my daughter-in-law sent me this Starbucks lemon loaf copycat recipe, I was hooked. It’s every bit as good—no, better—and costs a fraction to make. Plus, it features a surprising secret ingredient that truly makes all the difference."  Comment by Everyday Cheapskate

Although I have never had the Starbucks Lemon Loaf, I love lemon cakes.  So, if Mary of Everyday Cheapskate likes the copycat recipe, I'd be inclined to give it a try.

Country Potato Pancakes

"These potato pancakes are really versatile. They can be a side dish for just about any meal or the main course for a light meal. Potato pancakes go particularly well with pork."  Comment from Taste of Home

Potato recipes always get my attention.  I've made potato pancakes and they are delicious and I love them as an appetizer or snack.  A good idea is to use leftover mashed potatoes instead of grated potatoes, but maybe they won't be as crispy.

Cinnamon Roll Bread Pudding

Since the bread pudding
starts with a can of cinnamon rolls, it falls in my category of semi-homemade which I love on a busy day.  The only thing I don't like is the eggnog and I will substitute with milk.  Looks delicious and easy!

Baked Ham has always been on the holiday menu in my home.  Now that I am cooking for one, I still make a baked ham for myself.  The solution is either having lots of ham for delicious ham meals or buy a smaller ham.  I buy a smaller ham and still have ham leftovers.

"This pot pie is probably the coziest way to rework leftovers. The addition of fresh fennel, tarragon and homemade biscuits really takes this dish to the next level."  Comment from Taste of Home

There is something about a pot pie topped with biscuits that I love so much.  Those biscuits look delicious and so does the whole pot pie.  The biscuit recipe is worth looking into! Looks like a winner to me.
