Alfredo Shrimp Scampi Dump Dinner

"Just dump a box of pasta, bag of shrimp and a few other pantry staples into a dish and bake. Right before serving, stir in the heavy cream and top with grated cheese and fresh parsley for a rich and creamy weeknight dinner in a flash."  Comment from Food Network

This recipe is perfection!  My favorite food is shrimp and I could eat this every night.  The only change I would make is to take the tails off the shrimp.  I don't understand why these recipes are not prepared with no-tail shrimp.

Shortcut Chicken Enchiladas

"Ready in under an hour, this version of the Mexican favorite subs in store-bought rotisserie chicken and salsa for homemade fillings. It's a great use for that leftover half of a chicken, but if you have a whole chicken, you can easily double the recipe to make 8 to 12 servings."  Comment from Food Network Kitchen

Love this shortcut version of chicken enchiladas!  Great use for leftover chicken or so convenient to use a rotisserie chicken.  Looks fast, easy and delicious!

Roasted Brussels Sprouts

Brussels Sprouts-in-a-Blanket

This recipe is genius!  They are the perfect appetizer and I can image a plate of them at the buffet table disappearing fast.  I would love to have them for snacks.  The brussels sprouts wrapped in buttery puff pastry sounds amazing!

Cinnamon Roll Cake

I have never made a cinnamon roll from scratch since it takes so long and I usually make the refrigerated canned cinnamon rolls.  This recipe is somewhere in between scratch and the canned rolls and I love that.  I'm curious to try it!

Guava Cheese Turnovers (Guava Pastelillos)

These Guava Cheese Turnovers, like the guava empanadas, bring back childhood memories of a visit to a cuban restaurant in Ybor City where we would go to get a cuban sandwich followed by a Guava Cheese Turnover or empanada.  These visits bring back wonderful memories and I still enjoy these turnovers when I visit a cuban restaurant or bakery.  So happy to have the recipe to make at home.

Cheesy Guava Empanadas

These empanadas also bring back childhood memories of going to a cuban restaurant in Ybor City for a cuban sandwich, was always followed by a guava empanada or turnover that we could take home and if we were lucky we would be treated to a fruity ice cream treat called helados.  They were special trips that I always looked forward to and still do.  One of my favorite desserts and I am so happy to have the recipe to make at home.
