Slow Cooker Beef Enchiladas

When I first got my slow cooker, I made roast beef and gravy all the time.  It was like a new toy.  Both my husband and I loved having it at least once a week for a long time.  We would invite people over for dinner as an excuse to make it.  Only another foodie would understand.
