This is apparently a healthier version of country chicken and gravy.  I guess that is why there are no mashed potatoes in the photo.  I'll try it!

This meal takes me back to my childhood.  My nana would bake it in the oven, guess you could call it a sheet pan meal, same ingredients.  I make this dish in a skillet like the recipe.  My contribution to this recipe post is that I love to use poblano peppers and mushrooms.  The peppers have a wonderful spicy taste that is not hot.  That is my preference.  Use what you love.
