Frittatas . . . my favorite cheap meal.  I write about them all the time.  My favorite is potatoes cooked like home fries with caramelized onions cooked together, then top with beaten eggs.  Much like an omelette, but thicker.  Love it!  Click here to go to my post about my favorite frittata.
