Chimichangas

"You know what’s better than a burrito? A deep-fried burrito. The chimichanga is a staple of southwestern and Tex-Mex cuisine that’s similar to a burrito, with various fillings wrapped inside a tortilla then fried until golden brown. They taste best smothered with salsa, guacamole and sour cream, topped with cheese and lettuce, and served with rice and beans. This chimichanga recipe features onions, tomatoes, and green chiles in the filling, plus diced potatoes for some starchy goodness. This is apparently a healthier version of country chicken and gravy.  I guess that is why there are no mashed potatoes in the photo.  I'll try it!

This meal takes me back to my childhood.  My nana would bake it in the oven, guess you could call it a sheet pan meal, same ingredients.  I make this dish in a skillet like the recipe.  My contribution to this recipe post is that I love to use poblano peppers and mushrooms.  The peppers have a wonderful spicy taste that is not hot.  That is my preference.  Use what you love.
