Arancini

"If you’ve got arborio rice in your cupboard (a short-grain variety that cooks up nice and creamy) then you’re in luck. It’s the perfect choice for these cheesy, breaded-and-fried rice balls."  Comment from Food Network Magazine

I've never made Arancini, but have wanted to make them to use as appetizers for a party.  They look delicious, but I wonder if the arborio rice is easy to find and if long grain rice would work just as well.  I'm thinking rice is rice?  But I could be wrong.

How Long Cooked Chicken Lasts in the Fridge

"If you have some already cooked, it's ready to toss into salads, sandwiches, or grain bowls when you don’t feel like making a meal from scratch. But once it’s in the refrigerator, the question becomes: how long does cooked chicken last? Is that chicken that has been there since the weekend actually safe to eat? We spoke to food safety experts to find out and learned that the answer is nuanced."  Comment from Martha Stewart.com

Air Fryer Myths

"These nifty appliances caught fire (again, figuratively) on the promise of speed, versatility, and the illusion of health without trading in crispy fried goodness. But despite the widespread appeal, they remain a woefully misunderstood appliance. There are plenty of myths flying around, and they've probably left you scratching your head a bit. Do they make everything healthy? Could they take up the work of a deep fryer, an oven, and a microwave combined? And are they really a jumble of buttons you'll never figure out?

To sift through the noise and separate fact from fiction, we caught up with Coco Morante, author of "The Instant Kitchen Meal Prep Cookbook"; Becky Striepe, founder of Glue & Glitter; Michelle Doll Dolson, recipe development lead at HelloFresh; Andreas Hansen, founder of Fritaire; and registered dietitian Kristen Carli. Here's what they had to say about the air fryer "facts" you may have picked up along the way, and why it just might be time to show them the door."  Comments from Food Republic

I have no problem with my air fryer.  In fact, I basically don't use my oven, grill or slow cooker anymore since using it.  I absolutely love it and it is more than an air fryer.  Here is my air fryer that I bought in 2021 and highly recommend:

Slow Cooker Pot Roast - Two Versions

Pot roast is one of my favorite comfort food meals and I love the idea of preparing it in the slow cooker.

Here are two versions:

VERSION 1

The Old-School Pot Roast Recipe That Reminded Me Why I Love My Slow Cooker

"There is nothing easier than a slow-cooker meal. Because you don’t have to finely chop up the veggies or even brown the meat in the skillet before putting it in the slow cooker, this recipe is simple enough for any home cook to achieve. I’m intimidated by working with large cuts of meat, but this is a recipe I know even I can ace." Comment from Southern Living

VERSION 2

Slow Cooker Pot Roast

"This pot roast is rich and flavorful, with ultra-tender shreds of meat that basically melt in your mouth. Bonus: The slow cooker makes it super simple and lets you come home to the incredible aroma of a ready-to-eat dinner."  Comment from Taste of Home

Alfredo Shrimp Scampi Dump Dinner

"Just dump a box of pasta, bag of shrimp and a few other pantry staples into a dish and bake. Right before serving, stir in the heavy cream and top with grated cheese and fresh parsley for a rich and creamy weeknight dinner in a flash."  Comment from Food Network

This recipe is perfection!  My favorite food is shrimp and I could eat this every night.  The only change I would make is to take the tails off the shrimp.  I don't understand why these recipes are not prepared with no-tail shrimp.

Shortcut Chicken Enchiladas

"Ready in under an hour, this version of the Mexican favorite subs in store-bought rotisserie chicken and salsa for homemade fillings. It's a great use for that leftover half of a chicken, but if you have a whole chicken, you can easily double the recipe to make 8 to 12 servings."  Comment from Food Network Kitchen

Love this shortcut version of chicken enchiladas!  Great use for leftover chicken or so convenient to use a rotisserie chicken.  Looks fast, easy and delicious!

Roasted Brussels Sprouts

RECIPE COURTESY OF INA GARTEN

From:  The Barefoot Contessa Cookbook

"You can never go wrong with a simple take on a classic dish. A quick toss with salt and olive oil definitely does the trick when it comes to these perfectly roated Brussels sprouts."  Comment from Food Network

Love this recipe!  This is my favorite brussels sprouts recipe that I highly recommend.  I would not change a thing.

Brussels Sprouts-in-a-Blanket

"The best part of this twist on pigs-in-a-blanket isn't the roasted Brussels sprouts, buttery puff pastry or even the pleasantly salty prosciutto: it's the Parmesan cheese that is cleverly pressed into the dough while rolling and then sprinkled on top before baking. There's umami goodness throughout and toasty cheesiness all around."  Comment from Food Network

This recipe is genius!  They are the perfect appetizer and I can image a plate of them at the buffet table disappearing fast.  I would love to have them for snacks.  The brussels sprouts wrapped in buttery puff pastry sounds amazing!

Cinnamon Roll Cake

"Cinnamon Roll Cake features a soft homemade cake that’s swirled with the most scrumptious cinnamon roll filling! It’s baked to perfection in a casserole dish in just 30 minutes before being served with a generous amount of sugary sweet glaze."  Comment from The Recipe Rebel

I have never made a cinnamon roll from scratch since it takes so long and I usually make the refrigerated canned cinnamon rolls.  This recipe is somewhere in between scratch and the canned rolls and I love that.  I'm curious to try it!

Guava Cheese Turnovers (Guava Pastelillos)

"We can't talk about the iconic guava-and-cheese pairing without highlighting on of the pastries that celebrate it best: pastelillos. The Puerto Rican equivalent of a turnover, these pastelillos rely on storebought puff pastry to achieve that flaky crust that distinguishes them from their counterpart, the empanada."  Comment from Food Network

These Guava Cheese Turnovers, like the guava empanadas, bring back childhood memories of a visit to a cuban restaurant in Ybor City where we would go to get a cuban sandwich followed by a Guava Cheese Turnover or empanada.  These visits bring back wonderful memories and I still enjoy these turnovers when I visit a cuban restaurant or bakery.  So happy to have the recipe to make at home.

Cheesy Guava Empanadas

"For recipe developer Larisa Alvarez, the age-old combination of guava paste and cream cheese brings back memories of sitting at the breakfast table, munching on sweet bites of guava paste coated with cream cheese before a long day at school. These empanadas balance out the sweetness of the ripe guava with the unmistakeable tang of cream cheese and a sprinkle of queso duro — an intensely salty and savory hard cheese — in a golden, handheld shell."  Comment from Food Network

These empanadas also bring back childhood memories of going to a cuban restaurant in Ybor City for a cuban sandwich, was always followed by a guava empanada or turnover that we could take home and if we were lucky we would be treated to a fruity ice cream treat called helados.  They were special trips that I always looked forward to and still do.  One of my favorite desserts and I am so happy to have the recipe to make at home.

Creamy Lemon Pepper Chicken

"If you love lemon and are also short on time, my creamy Lemon Pepper Chicken is the dish to make tonight. Chicken cutlets are seared until golden, then simmered in an easy creamy lemon pan sauce. This dish is delicious, and since it's ready in less than 40 minutes, it's absolutely perfect for weeknights!"  Comment from Sip and Feast

I'm always happy to have another chicken recipe!  This chicken sounds delicious.
