Tamale Pie

"Tamales are a traditional Mexican dish often made on special occasions, like New Year's Day. This twist on the classic is made with corn muffin mix so it's even easier to make."  Comment from The Pioneer Woman.

There aren't enough texmex type of recipes on my blog and they are some of my favorites.  This one is semi-homemade which is a good thing.

"This Bisquick chicken and dumplings recipe is made in minutes but tastes like it’s been simmering all day. With a ready-made soup base, cooked chicken, and veggies, Bisquick chicken and dumplings deliver creamy, cozy flavor in every bowl."  Comment from centslessdeals.com.

There are many chicken and dumplings recipes on my blog since they are one of my favorites and I like to have lots of versions, especially one that is semi-homemade.  Love Bisquick meals!  Between Bisquick and a rotisserie chicken, that is saving a lot of time in the kitchen.

Potato Stacks

"They're like mini scalloped potatoes!

Love the crispy, golden top of scalloped potatoes? Then these cheesy potato stacks are about to become your favorite side dish. Thinly sliced potatoes are layered with cream, parmesan, cheddar, and fresh thyme, then baked in a muffin tin until tender and creamy. A final blast of heat turns the edges irresistibly crisp while the centers stay soft and melty."  Comment from The Pioneer Woman

Great idea and they look delicious!
