Beer-Battered Fish

It has been years since I've had beer battered fish and I love it.  We used to go to the Arthur Treachers Restaurant all the time and then they closed.  Since then there isn't anywhere that I know of to get it.  I look forward to making my own.

Creamy Corn Casserole

A corn lover's dream casserole!

This recipe has been listed on All Recipe's website for quite some time and has over 2000 reviews.  Most of the reviews are raves about the casserole and many are now including it in their Thanksgiving Meal . . . that is special!

I would not change a thing until I make it the first time.



UPDATE

While the casserole was baking, it made the house smell better than bread baking!

The casserole itself was delicious and we will make it again and again.  Not that it was too plain, but to enhance the flavor, both The Captain and I agreed some pepperjack or cheddar cheese would be awesome . . . some diced peppers would also be great.






Easy Spaghetti and Meatballs

I am going to give the sauce a try because it is my belief that using straight up tomato kind of sauce comes out bitter if not cooked for at least an hour or two with the addition of a teaspoon of sugar.  The other thing is that my nana used tomato paste that she would "fry" in the sofrito.  The amount depended on how much sauce to be made.  Small batch would be a tablespoon.  Just my opinion!

Angel Hair Pasta with Spicy Shrimp




Angel hair pasta is one of my favorite types of pasta.

What I really love . . . it is ready to go from boiling water to plate in 3 or 4 minutes.  When I don't know what I'm hungry for, I start the water boiling with salt and garlic, throw in the Angel Hair Pasta and on the side melt some butter in a little olive oil, add minced garlic.  Drain the pasta, add the butter and garlic mixture and liberally add parmesean cheese.  One of my favorite meals ready within 10 minutes!  Add a salad and some bread and you've got an awesome meal.

But if you want to get a little fancier . . . try Angel Hair Pasta with Spicy Shrimp!  With my version, I saute garlic, green onion, cayenne pepper and dill in a mixture of olive oil and butter, add shrimp and cook for just 4 minutes (or until the shrimp is pink) . . . don't overcook the shrimp!!  Pour over the pasta, add some parmesean cheese . . . mmmm!

When I think of fajitas, the vision of sitting in a Chili's Restaurant with a server passing by with a sizzling plate of fajitas and the intoxicating aroma hits you as it goes by.  It always leaves me wishing that I had ordered fajitas!

I love fajitas the traditional way served with tortillas, but being the rice lover that I am, it is also very much enjoyed over rice.  Either white rice or mexican rice.  Outstanding meal!!  Try it on the side the next time you make fajitas and you won't be sorry (unless you are not a rice lover).

When I cook, I like to do it in different tasks.  It always starts with prepping the vegetables and setting them aside for the next cooking session.  But the exception is always potatoes.  After reading this article, I don't have to make them an exception.
