Onion Rings Extravaganza

Since onion rings are one of my favorite side dishes, I have tried so many recipes and still did not find one that I really like.  So I set out to find the recipes that looked best to me.  Grandma's recipe sounds good, but I wanted more to try.  Read on if you love onion rings.

Apple Fritter Cake

"Apple fritter cake is incredibly moist, with a good hit of tart apple flavor and warm spices. The thin glaze on top adds a bit of sweetness without being cloying. Honeycrisp apples work particularly well in this recipe, delivering a tart-sweet flavor that complements the cake."  Comment from Southern Living

Just bring me a piece of this cake hot out of the oven with a cup of coffee.  Oh my God, it sounds delicious!

Key Lime Pound Cake

"Our Key lime pound cake somehow manages to be both substantial and airy—it's a textural dream. It's also infused with the zesty zing of fresh Key limes. That's thanks to both lime zest and Key lime juice, a dynamic, flavorful duo that really shines in this recipe. The icing on the cake (literally) is a gorgeously silky and wonderfully tart Key lime glaze."  Comment from Southern Living

This pound cake sounds awesome.  Lemon pound cake is one of my favorite cakes and key lime has to be much better.

Pecan Sandies

"Pecan sandies combine the quintessentially toasty Southern taste of pecans with buttery shortbread. In this recipe, chopped toasted pecans are dotted throughout the cookie, which has a pleasant, tender crumb."  Comment from Southern Living

One of my favorite cookies!  It will be my pleasure to make these for the first time.  I love the cookies from the grocery store, so I am going to super love these homemade cookies.

Old-Fashioned Caramel Cake

"Buttery, rich, and decadent, this old-fashioned caramel cake is easy to make and guaranteed to please. A basic recipe structure yields a cake with the texture of pound cake that offers hints of luscious caramel flavor without being too sweet or overpowering.

Learn everything you need to know about making caramel cake. Plus, find out how to store it so it's every bit as good on day three as day one."  Comment from Southern Living

I've never had a caramel cake, but I love caramel and it should be a winner!  Nice looking cake.

Chicken Marsala

"What Is Chicken Marsala?

Chicken Marsala isn’t a traditional Italian dish. Rather, it's an Italian American dish, crafted by immigrants who were looking to recreate their favorite meals in their new homeland. Since lamb and pork weren’t readily available, scallops or scaloppini ("thin cuts of meat") were made from chicken.

The chicken is cooked in a hot skillet with a bit of oil or butter and then served with a pan sauce made with Marsala wine. Today, most chicken Marsala is served with pasta, but risotto, mashed potatoes, or roasted potatoes are also excellent accompaniments."  Comment from Simply Recipes

This recipe will be a first for me since I've never had Chicken Marsala.  It looks and sounds delicious.

"These roasted mushrooms are perfect if you're hoping to transform bland mushrooms into a flavorful side dish! My favorite way to serve these is with a juicy grilled ribeye. You can use any oven-proof skillet or dish; use a size that's just big enough to fit all the mushrooms."  Comment from All Recipes

Stuffed mushrooms are one of my favorite appetizers and these look delicious.  I would have to find a way to add crab!

Love the crispy, golden top of scalloped potatoes? Then these cheesy potato stacks are about to become your favorite side dish. Thinly sliced potatoes are layered with cream, parmesan, cheddar, and fresh thyme, then baked in a muffin tin until tender and creamy. A final blast of heat turns the edges irresistibly crisp while the centers stay soft and melty."  Comment from The Pioneer Woman

Black-Eyed Peas

According to legendary Southern food journalist and writer John Egerton in Southern Food: At Home, On the Road, In History, black-eyed peas are associated with a "mystical and mythical power to bring good luck"

Cheesecake Crowns

"These elegant dessert pastries are so easy to make, but no one will believe it! I've served the fruit-filled crowns at brunch as well as after dinner."  Comment from Taste of Home

It is amazing how easy it is with puff pastry to make beautiful desserts.  I love how you can use your imagination to change the filling to another fruit and actually make all different fillings to top the cheesecake mixture with the same batch.  Love it!

Snickerdoodle Cake

"A snickerdoodle warm from the oven is like a comforting hug in cookie form. With its slightly tangy flavor; soft, chewy and tender texture; and sweet cinnamon coating, the cookie couldn’t be cozier. This snickerdoodle cake recipe takes everything you love about a snickerdoodle cookie and transforms it into a moist and delicious three-layer cake.

Each layer features a cinnamon-sugar swirl to re-create the sweet snickerdoodle flavor. To complement the cookie’s slightly tangy taste, a cream cheese frosting flavored with cinnamon and vanilla tops the cake. Whip up this recipe when you need a cake for a special occasion, whether it’s a birthday, a baby shower or to celebrate successfully making it through another week."  Comment from Taste of Home

Snickerdoodle cake with cream cheese frosting sounds delicious and perfect to make for any special occasion like I have to have some.  Thank you to Susan Bronson of Taste of Home for this amazing recipe.

Creamy Crab Pasta

This Creamy Crab Pasta looks like some of the expensive pasta dishes I've had at popular restaurants.  The homemade pasta dishes I make at home are just as delicious as those in the restaurants.  If you just want to get out of the kitchen and give yourself a break, go to the restaurant.  But if you just want an awesome pasta dish that you can make yourself for a fraction of the price, try a recipe like this one.
