This meal takes me back to my childhood. My nana would bake it in the oven, guess you could call it a sheet pan meal, same ingredients. I make this dish in a skillet like the recipe. My contribution to this recipe post is that I love to use poblano peppers and mushrooms. The peppers have a wonderful spicy taste that is not hot. That is my preference. Use what you love.
