California Tamale Pie






1 lb. lean ground beef

3/4 cup yellow cornmeal

1-1/2 cups milk

1 egg; beaten

1 pkg. chili seasoning mix

1 tsp. seasoned salt

16 oz. can tomatoes; cut up

16 oz. frozen corn, drained

2-1/4 oz. can sliced ripe olives,
sliced and drained

1 cup cheddar cheese, grated



In skillet, cook meat until crumbly; drain.

In large bowl, mix cornmeal, milk and egg.

Add drained meat, dry chili seasoning mix,
seasoned salt,
tomatoes, corn and olives.

Pour into slow-cooking pot.
Cover and cook on high for 3-4 hours.

Sprinkle cheese over top.

Cook another 5 minutes.

No-Bake Turtle Cheesecake




From the Pillsbury website...


Prep Time: 20 min ; Start to Finish: 3 hr 20 min
Makes: 16 servings

Keep cool while you make a crowd-size cheesecake. No baking required!



Crust

1 1/4 cups chocolate wafer crumbs
2 tablespoons sugar
1/4 cup butter, melted
1/4 cup chopped pecans


Filling

2 (8-oz.) pkg. cream cheese, softened
1 1/2 cups milk
1/4 cup firmly packed dark brown sugar
2 teaspoons vanilla
1 (3.4-oz.) pkg. instant vanilla pudding and pie filling mix
1/4 cup chocolate fudge ice cream topping (not hot fudge)
1/2 cup pecan halves
1/3 cup caramel ice cream topping
Whipped cream, if desired


1 . In medium bowl, combine all crust ingredients; mix well. Press mixture evenly in bottom of ungreased 9-inch springform pan.

2 . In medium bowl, beat cream cheese until fluffy. Gradually beat in milk until mixture is smooth. Add brown sugar and vanilla; beat until well blended. Add pudding mix; beat at low speed for 2 minutes. Pour mixture over crust in pan.

3 . Drizzle with fudge topping; swirl into filling with tip of knife. Arrange pecan halves over top of cheesecake. Refrigerate at least 3 hours or until firm.

4 . To serve, cut cheesecake into wedges; place on individual dessert plates. Drizzle each serving with caramel topping. Top each serving with whipped cream.

Chicken Parmesan Filled Shells





Ingredients:

1-1/2 cups ricotta cheese
1 egg
1/2 tsp. parsley
1/4 tsp. garlic powder
1/8 tsp. oregano
1/8 tsp. pepper
3/4 cup grated Parmesan cheese
2 cups shredded Mozzarella cheese, divided
2 cups cooked, shredded chicken
16 jumbo pasta shells, cooked and drained
2-3 cups spaghetti sauce



Directions:

1. In a medium mixing bowl, combine ricotta cheese, egg, parsley, garlic powder, oregano and pepper; mix well. Stir in Parmesan cheese, 1-1/4 cups Mozzarella cheese and chicken.

2. Preheat oven to 350ยบ.

3. Pour half of the spaghetti sauce in the bottom of an 9x13-inch baking dish. Evenly fill shells with chicken mixture and place in dish. Pour remaining sauce over shells; sprinkle with remaining Mozzarella cheese.

4. Cover dish with foil and bake for 30 minutes. Uncover and let stand 5 minutes before serving.

Yield: 4-6 servings.

Root Beer Float Cake



Root beer floats . . . one of my all time favorites.

One of our favorite cafes has recently
introduced their soda fountain . . . I was so excited to see they added root beer floats to their menu.

We have made it a tradition to visit the cafe after

work on Friday afternoons . . . the root beer float
is my TGIF treat, a reward
for making it through
another stressful week of work.

Ingredients

1 package (18-1/4 ounces) white cake mix
1-3/4 cups cold root beer, divided

1/4 cup canola oil
2 eggs
1 envelope whipped topping mix (Dream Whip)



Directions


In a large bowl, combine dry cake mix,
1-1/4 cups root beer, oil and eggs.

Beat on low speed for 2 minutes or stir by hand for 3 minutes.
Pour into a greased 13-in. x 9-in. baking pan.

Bake at 350° for 30-35 minutes or until a toothpick
inserted near the center comes out clean.

Cool completely on a wire rack.


In a small bowl, combine the whipped
topping mix and remaining root beer.

Beat until soft peaks form.

Frost cake.

Store in the refrigerator.



Yield: 12-16 servings.

Pasta-Broccoli Salad





Ingredients:

1/4 cup Sour Cream
3/4 cup Mayonnaise
1/3 cup Scallions, sliced
2 tablespoons fresh Dill (or 1 teaspoon dried)
8 ounces medium Shell Pasta, cooked
3 cups Broccoli Florets
1 1/2 cups Red Pepper, thinly sliced


Dressing:

Mix sour cream, mayonnaise, scallions, and dill.


Combine cooked pasta, broccoli, and peppers.

Spoon in dressing and toss gently.

Cover and refrigerate until ready to serve.

Easy Italian Coconut Cream Cake






Cake:

1 box white cake mix
1 small box instant vanilla pudding
1 1/3 cups water
4 eggs
1/2 cup vegetable oil
1 cup chopped pecans
2 cups coconut



Frosting:

4 tablespoons butter, softened
8 ounces cream cheese, softened
3 tablespoons canned milk
3 1/2 cups confectioners' sugar
2 cups coconut


Combine cake mix, pudding mix, water, eggs and oil and beat on low speed for 4 minutes.

Stir in nuts and coconut then pour into well greased and floured rectangular cake pan.

Bake at 350 for 40 minutes.

Combine all frosting ingredients and spread on cooled cake.

Creole seasonings . . . a guide





Herbs and spices add important flavors to Creole dishes.

Here are the main seasonings used, as described by The Spice Hunter, a
firm that packages herbs and spices.

Bay leaves: Used whole to add a signature pungent flavor to hearty
dishes such as gumbo and red beans and rice.
Remove before serving.

Black and white pepper: From the berries of the pepper plant, black is
hot with a slightly piney flavor while
white is milder and more delicate. Both are used liberally in Creole
cooking.

Cayenne pepper (also called ground red pepper): Made from the dried pods
of chili peppers, it adds heat to red beans and rice, etouffee and jambalaya.

Celery seed: Lends the slightly bitter flavor of fresh celery to any dish.
Used in most Creole seasoning blends.

Garlic powder: Dehydrated ground garlic often is used because it
disperses better in dishes.
To use fresh garlic, 1 clove equals 1/8 teaspoon of garlic powder.

Gumbo file: Dried, ground sassafras leaf, used to add flavor to and
thicken gumbo.

Onion powder: Dehydrated, ground onions are used in Creole seasoning
blends for meat and fish.

Oregano: Used with meat, fish and vegetable dishes, oregano has a
pungent odor and flavor that lend depth to meat and vegetable dishes.

Sweet basil: Intensely fragrant and slightly sweet, basil can be added
to any dish but is especially good with meat, cheese and eggs.
One tablespoon of fresh equals 1 teaspoon of dried.

Sweet paprika: A warming spice with a pungent flavor, it's great for
fish and vegetable dishes and remoulade sauce.

Thyme: Found in most traditional Creole dishes, thyme adds a slight
minty flavor and subtle aroma to gumbos and etouffee.
The leaves from three to four sprigs of fresh thyme equal about 3/4
teaspoon dried thyme.

Stuffed Shrimp





Ingredients

1 lb.large shrimp, cooked
1 pkg. (3 oz.) cream cheese with chives, softened
to taste paprika
1 tbsp. each white horseradish, grated parmesan cheese
1/4 cup dried parsley



Directions

Slice cooked shrimp in half lengthwise (de-veined) and set aside.

In a small bowl combine cream cheese, horseradish and parmesean.

Spread mixture between shrimp halves and press gently to hold together.

Spread parsley on a piece of wax paper and sprinkle paprika
on another piece of wax paper.

Dip outside edge of shrimp in parsley or paprika,
making an equal number of each.

Chill until ready to serve.

Old-Fashioned Chocolate Pie

Ingredients

1 cup sugar
1/3 cup baking cocoa
1/3 cup flour
pinch salt
2-1/3 cups water
1 Tbs. butter or margarine
1 tsp. vanilla extract
1 (9") pastry shell, baked
Whipped cream and chocolate sprinkles


Directions

In a large saucepan, combine the sugar and cocoa, flour and salt.
Gradually add water. Cook and stir over medium heat until mixture
comes to a boil.

Cook and stir for 1 minute or until thickened.

Remove from the heat; stir in butter and vanilla.

Pour into pastry shell.

Refrigerate for 2-3 hours before slicing.

Garnish with whipped cream
and chocolate sprinkles.

Butter Pecan Fudge


Ingredients:

1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1/2 cup heavy whipping cream
1/8 tsp. salt
1 tsp. vanilla extract
2 cups powdered sugar
1 cup pecan halves, toasted and coarsely chopped


Directions:

1. In a large heavy saucepan, combine butter, sugars, cream and salt.
Bring to a boil over medium heat, stirring occasionally. Boil for 5 minutes, stirring constantly. Remove from the heat; stir in the vanilla. Stir in the powdered sugar until smooth. Fold in pecans.

2. Spread into a buttered 8-inch square dish. Cool to room
temperature. Cut into 1-inch squares. Store in an airtight container in the refrigerator.


Tip:

When making fudge, you can simply butter or grease the pan with cooking spray to prevent the candy from sticking. But many recipes suggest first lining the pan with foil. This allows the fudge to be lifted out of the pan in one piece. Cutting the fudge outside of the pan prevents the pan from being scratched by the knife and also allows for more evenly cut pieces. To prepare a foil-lined pan, line the pan with foil extending over the sides of the pan. Grease the foil with butter or coat with cooking spray.

Rich Cheesecake Bars





Ingredients:

1 pkg. (9 ounces) yellow cake mix
3 tablespoons butter, softened

1 egg



For The Topping:

1 package (3 ounces) cream cheese, softened
2 cups confectioners' sugar

1 egg




Instructions:

In a large bowl, combine the cake mix, butter, and the egg
until well blended.

Spread into a greased 9 inch square baking pan.


In a small bowl, beat the cream cheese, the confectioners' sugar,
and the egg until smooth. Spread evenly over the batter.


Bake at 350 F for 30-35 minutes or until a toothpick inserted
near the center comes out clean.


Cool on a wire rack. Cut into bars. Store in the refrigerator.


Makes 2 dozen

Popeye's Cajun Gravy



1 tablespoon vegetable oil
1 chicken gizzard
2 tablespoons minced green bell pepper
1/4 cup ground beef
1/4 cup ground pork
2 cups water
1 (14 ounce) can beef broth
2 tablespoons cornstarch
1 tablespoon all-purpose flour
2 teaspoons milk
2 teaspoons distilled white vinegar
1 teaspoon granulated sugar
1 teaspoon salt
1/2 teaspoon coarse ground black pepper
1/4 teaspoon cayenne pepper
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
Dash dried parsley flakes

Heat vegetable oil in a large saucepan over medium heat.

Saute chicken gizzard in the oil for 4 to 5 minutes until cooked.

Remove gizzard from the pan and let cool.

Finely mince the gizzard after it has cooled.

Combine ground beef and ground pork.
Mix with your hands until well mixed.

Add bell pepper to the saucepan and saute it for 1 minute.

Add ground beef and pork to the pan and cook brown.

Mash meat into tiny pieces as it browns.

Add water and beef broth to the saucepan, then
immediately whisk in cornstarch and flour.

Add remaining ingredients and bring to a boil.

Reduce heat and simmer gravy until thick - about 30 to
35 minutes.

French Silk Chocolate Pie







CRUST:
1 Pillsbury Refrigerated pie crust (from 15-oz. pkg.)


FILLING:

3 oz. unsweetened chocolate, cut into pieces

1 cup butter, softened (do not use margarine)

1 cup sugar

1/2 tsp. vanilla

4 pasteurized eggs or 1 cup refrigerated or frozen fat-free egg product, thawed


TOPPING:

1/2 cup sweetened whipped cream

Chocolate curls, if desired


Instructions:


1. Heat oven to 450. Prepare pie crust as directed on package for
one-crust baked shell using 9-inch pie pan. Bake at 450 for 9 to 11 minutes or until light golden brown. Cool 30 minutes or until completely cooled.

2. Melt chocolate in small saucepan over low heat; cool. In small
bowl, beat butter until fluffy. Add cooled chocolate and vanilla; blend well.

3. Add eggs 1 at a time, beating at high speed for 2 minutes after each addition. Beat until mixture is smooth and fluffy. Pour into cooled baked shell. Refrigerate at least 2 hours before serving. Top with whipped cream and chocolate curls.

Store in refrigerator.

ultra-rich chocolate pie to the 3rd Bake-Off Contest. Her original recipe included raw eggs, but this updated, safer version calls for pasteurized eggs or egg product.

De Lime in De Coconut Cheesecake



Ingredients

For the crust:

1 cup graham cracker crumbs
1/2 cup sweetened shredded coconut
3 tbsp sugar
1 tsp grated lime zest
3 tbsp butter, melted


For the filling:
4 (8 oz.) packages cream cheese, softened
4 eggs
1 (15 oz.) can sweetened cream of coconut milk
1/2 cup sour cream
2 tsp grated lime rind
1/4 cup fresh lime juice
1 tsp vanilla sweetened whipped cream and lime wedges (optional)


Directions

Preheat the oven to 325 F.

To prepare the crust, combine all the ingredients in the bowl of a food processor. Process until just blended.

Press in the bottom and about 1/2 inch up the sides of a 10-inch springform pan.

To prepare the filling, place the cream cheese in a large bowl. Beat with a mixer at medium-high speed until smooth. Reduce the speed to low. Add the eggs, one at a time. Beat well. Add the remaining filling ingredients. Beat well. Scrape the bottom and the sides of the bowl occasionally.

Scrape the filling into the crust.

Bake for 75 to 90 minutes, until the center jiggles slightly when the pan is tapped.

Remove from the oven and run a knife around the inside of the pan. Cool to room temperature on a wire rack. Cover with plastic wrap and refrigerate overnight.

Garnish with the whipped cream and lime wedges, if desired.

Makes 16 servings

Almond Butter Cookies



Ingredients:

1 cup butter, softened
1/3 cup confectioners' sugar
1 cup ground almonds
1 tsp alomond extract
2 cups flour

Garnish: confectioners' sugar, edible glitter



Directions:

Preheat the oven to 350 F.

Lightly grease the baking sheets.

In a large bowl and using an electric mixer, beat the butter and confectioners' sugar until creamy.

Add the almonds and the almond extract. Beat well.

Slowly beat in the flour.

Shape the dough into 1-inch balls. Place on the prepared baking sheets.

Bake for 18 minutes or until lightly browned. Immediately remove the cookies to waxed paper.

Garnish by sifting generous amounts of confectioners' sugar over the warm cookies. Sprinkle with edible glitter, if desired.

Makes 36 cookies

Cheddar Parmesan Potatoes




Ingredients:

1/4 cup butter or margarine
1/4 cup all-purpose flour
2 cups milk
1/2 teaspoon salt
1 cup shredded Cheddar cheese
1/2 cup Parmesan cheese
5 cups sliced, cooked and peeled potatoes
1/4 cup bread crumbs



Directions:

In a saucepan, melt butter over low heat.

Stir in flour until smooth.


Gradually add milk.

Cook and stir over medium heat until mixture thickens.


Remove from heat and add salt and cheeses.

Stir until Cheddar cheese melts.


Place potatoes in a greased 2-quart baking dish and
add cheese mixture, stirring gently to mix.


Sprinkle bread crumbs on top.

Bake uncovered at 350 degrees F for 30 to 35 minutes.

Makes 6 to 8 servings.

Fat Tuesday Shrimp Creole Over Dirty Rice




Louisiana Dirty Rice

1/4 Cup Onion, chopped
1/4 Cup Celery, chopped, leaves, too
1/2 lb. Fresh Andouille or Pork Sausage

In large skillet, brown sausage with the onion and celery until the
sausage is just cooked and crumbled and the vegetables have softened.
If sausage produces excess fat, drain.
If using Jungle Jim's fresh sausage, no need to drain.

To the browned sausage mixture, add:

1 Cup White Long Grain Rice, uncooked
2 Cups Water
1 1/2 Tsp. Ground Cumin

Stir ingredients together and bring to a boil.
Cover, reduce heat to low, and simmer for 20 minutes or until rice is
tender.

While your Dirty Rice is simmering . . .



Fat Tuesday Shrimp Creole

2 Tab. Canola Oil or Extra Virgin Olive Oil
1/2 Cup Onion, chopped
1/2 Cup Green Bell Pepper, chopped
1/4 Cup Celery, chopped

Heat oil over medium high heat and sautรฉ vegetables until tender, about
4-5 minutes.

Add:

2 Cloves Garlic, minced

Cook one minute more.

Sprinkle vegetables with:

1 Tsp. Creole Seasoning*
1/4 Tsp. Cayenne Pepper or to taste

Stir mixture thoroughly.


Add:

1 - 14.5 oz. Can of diced tomatoes, undrained
1/4 Cup White wine, water, tomato juice, or tomato sauce
1 Bay Leaf

Bring mixture to a boil.
Cover, reduce heat to low and simmer 10 minutes.


Add:

1 lb. Fresh, raw Shrimp, cleaned, shelled, and deveined

Simmer, covered, 4-5 minutes or until shrimp is opaque.

Remove Bay leaf and discard.

Check seasoning and add salt and pepper and additional spice to taste.
(Some Louisiana cooks swear by adding a pinch of sugar and a dash of hot
sauce at the end of the dish!)

Sliced Green Onion and Chopped Fresh Parsley

Spoon Dirty Rice into a low bowl or plate and top with Shrimp Creole.
Sprinkle chopped green onion and parsley over top and serve.
Don't forget a bottle of hot sauce for the table!

Makes 4 scrumptious dinner servings.

Chocolate Cherry Upside-Down Cake




Ingredients:

1 tablespoon cornstarch
1 tablespoon cold water
1/4 to 1/2 teaspoon almond extract (optional)

1 can (21 oz.) cherry pie filling

1-2/3 cups all-purpose flour

1 cup sugar

1/4 cup HERSHEY'S Cocoa
1 teaspoon baking soda

1/2 teaspoon salt
1 cup water

1/3 cup vegetable oil
1 teaspoon white vinegar
1/2 teaspoon vanilla extract


Directions:

1. Heat oven to 350°F. Stir together cornstarch, 1 tablespoon water and
almond extract, if desired, until cornstarch is dissolved. Gently stir in pie filling; spread mixture evenly on bottom of ungreased 9-inch square baking pan.

2. Stir together flour, sugar, cocoa, baking soda and salt in large
bowl. Add 1 cup water, oil, vinegar and vanilla; beat with spoon until batter is smooth and well blended. Pour batter evenly over cherries.

3. Bake 40 to 45 minutes or until wooden pick inserted in center comes
out clean. Cool 10 minutes; invert onto serving plate.

Serve warm with
whipped cream . . . wait . . .
vanilla ice cream sounds better :-)






UPDATE:

The concept is awesome, however, the cake in this recipe was dry

 and there were not enough cherries to make a significant topping.

When I make this again, I will use a cake mix and

 double the cherry mixture.

Shrimp and Pasta





The combination of shrimp and pasta
is among my favorites. You won't be
surprised to know I have many variations.

This is one that is quick, easy and delicious.

Serve with lots of parmesean cheese
and italian bread!





Ingredients:

2 lbs. raw shrimp, cleaned
2 Tbs. butter

2 Tbs. olive oil

4 cloves garlic, chopped

1 tsp. red pepper flakes

1 tsp. Old Bay season
1 lb. angel hair pasta




Directions:

Cook pasta according to package directions. In a large skillet melt butter into olive oil and lightly saute the garlic. Add shrimp and sprinkle with pepper flakes and Old Bay. Saute just until shrimp begin to turn pink.

Add your cooked pasta to the pan and
finish cooking the shrimp.

Do not overcook!

Mexican Shrimp Dip




Ingredients:

8 oz cream cheese
2 T milk
dash of salt and pepper

1/2 c Heinz chili sauce
1 c fresh or frozen tiny shrimp-drain, rinse, pat dry
4 chopped green onions
3/4 c red bell peppers

4 oz sliced black olives-drain and pat dry
4 oz mozzarella or Monterey Jack cheese-grated
Party crackers or party bread slices




Directions:

Mix cream cheese, milk, salt, and pepper in small bowl smooth.

Spread on a serving plate.


Top with remaining ingredients in the order listed in even layers.


Cover and chill 1-4 hours.

Serve with crackers or bread slices.

Fried Dough

The smell of the Florida State Fair is what came to mind when I found this recipe. My grandmother used to make a pastry similar to the fried dough at the fair, although it was more like bite sized pieces. 



Ingredients:


8 eggs
1 cup sugar1 tsp. salt1 pint milk, warm1 stick butter soft4 cups flour
2 packages yeast




Directions:

Pour yeast in 1 cup warm milk
and 1 tablespoon of sugar, stir.

Sift together flour, salt, and
sugar and make a well in mixture.

Add eggs and milk a little at a time.

Add butter.

Stir well.

Mix thorough and place dough in large greased bowl.

Cover and let rise for about 11/2 to 2 hours.

When dough rises and appears light in texture,
cut off some of the dough and stretch it with your hands.

Drop into hot fat and fry until golden brown.

Add anything you would like to the fried dough,
such as powdered sugar, cinnamon and sugar.

Boiled Lobster



I'll never forget the first time I had my first broiled lobster.  It was one of my first dates . . . he ordered lobster and I thought I would order the same thing.

When the waiter presented us with our meal, he also handed us nut crackers and bibs.  I didn't have the slightest idea what to do with this whole lobster sitting in front of me.

So I watched my date eat his lobster and tried to do what he did.  I made such a mess!

Needless to say, I never ordered a lobster at a restaurant again, but I do love to make a mess with a lobster in the comfort of my home.

The recipe comes from my personal collection.




Ingredients:

3 gallons water
2 large onions, quartered
10 cloves garlic, peeled and cut in half
2 lemons, quartered
2 oranges, quartered
5 stalks celery, quartered
4 tablespoons black pepper
4 tablespoons seasoned salt
6 fresh jalapeno peppers
2 fresh live lobsters



Directions:

Pour the water into a large pot and add the onions,
garlic, lemons, oranges, celery, black pepper, seasoned salt
and jalapeno peppers.

Bring to a full rolling boil and boil for 20 minutes.

Add the lobsters and place a lid over the pot.
Boil for 15 minutes.

Remove the lobsters from the pot, and place in a
colander under cool running water to stop the cooking.

Serve.

Coconut Cookies



Ingredients:

1/2 cup butter, softened
1 cup sugar
1/4 cup packed brown sugar
1 egg
1 1/2 tsp vanilla
2 cups flour
1 1/2 tsp baking powder
1/8 tsp salt
1 cup flaked coconut


Directions:

In a large bowl, cream the butter and the sugars until light and fluffy.

Beat in the egg and the vanilla.

Combine the flour, baking powder, and the salt.

Gradually add to the creamed mixture. Mix well.

Stir in the coconut.

Shape into two 3 1/2 inch rolls.

Wrap each roll in plastic wrap. Refrigerate for 2 hours or until firm.

Unwrap and cut into 1/8 inch slices.

Place 2 inches apart on ungreased baking sheets.

Bake at 425 F for 5-7 minutes or until lightly browned.

Remove to wire racks to cool.

Makes 4 1/2 dozen cookies

Caramel Cashew Chewies



Ingredients:

3/4 cup butter, softened
3/4 cup packed brown sugar
1 egg
1 1/2 cups flour
1 cup old fashioned oats
1 pkg. (14 ozs.) caramels
1/3 cup half-and-half
1 cup semisweet chocolate chunks
1 cup salted cashew halves, chopped



Directions:

In a large bowl, cream the butter and the brown sugar.

Beat in the egg.

Stir in the flour and the oats.

Press into a 13 x 9 inch baking dish coated with cooking spray.

Bake at 350 F for 15-18 minutes or until golden brown.

Meanwhile, in a small saucepan, combine the caramels and the cream.
Cook over low heat for 4-5 minutes or until the caramels are melted.
Stir occasionally.

Pour over the crust. Sprinkle with the chocolate chunks and the cashews.

Bake for 8-10 minutes or until the chocolate is melted.

Cool on a wire rack before cutting. Makes 3 dozen depending on size cut.
