Garlic and Sun Dried Tomato Hummus



Ingredients

  • Cooking spray
  • (6-inch) pitas, each cut into 10 wedges
  • 1/4 cup water
  • 2 tablespoons chopped oil-packed sun-dried tomato halves
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • garlic cloves
  • (15-ounce) can chickpeas (garbanzo beans), drained

Preparation

  • Preheat oven to 425°.
  • Coat a baking sheet with cooking spray. 

  • Place pita wedges on pan, and coat with cooking spray. 
  • Bake at 425° for 6 minutes or until golden.

  • Combine water, tomato, salt, pepper, garlic,
  •  and beans in a food processor, and
  •  process until smooth. 

  • Serve with pita wedges.

Black Bean Hummus



Ingredients

  • garlic clove, peeled
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon tahini (roasted sesame seed paste)
  • 1 teaspoon ground cumin
  • 1/4 teaspoon salt
  • (15-ounce) can black beans, rinsed and drained
  • small jalapeño pepper, chopped (about 2 tablespoons)
  • Dash of crushed red pepper
  • 2 teaspoons extra-virgin olive oil
  • Dash of ground red pepper
  • (6-ounce) bag pita chips (such as Stacy's Simply Naked)

Preparation

  • 1. Place garlic in a food processor; process until finely chopped. Add lemon juice, tahini, cumin, salt, black beans, jalapeño pepper, and crushed red pepper; process until smooth. Spoon bean mixture into a medium bowl, and drizzle with extra-virgin olive oil. Sprinkle with ground red pepper. Serve with pita chips.

Jalapeno Hummus




Hummus for those who love it hot and spicy!


Ingredients

  • 1 cup garbanzo beans
  • 1/3 cup canned jalapeno pepper slices, juice reserved
  • 3 tablespoons tahini
  • 3 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon curry powder
  • crushed red pepper to taste


Directions
In a blender or food processor, mix the garbanzo beans, jalapeno peppers and reserved juice, tahini, garlic, and lemon juice. Season with cumin, curry powder, and crushed red pepper. Blend until smooth.

Roasted Red Pepper Hummus




Ingredients
  • 1/3 cup tahini (sesame seed paste)
  • 1/4 cup water
  • 1/4 cup chopped bottled roasted red bell peppers, rinsed and drained
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon salt
  • garlic clove, minced
  • (15 1/2-ounce) can chickpeas, rinsed and drained


Preparation

  • 1. Place all ingredients in a food processor; process until smooth.

Hummus (Chickpea & Tahini Purée)



The Captain and I are embarking on a new lifestyle of healthier eating, although we will still indulge in those sinful foods that we love.  And I will still post those sinful recipes . . . but I'm looking for healthier alternatives and will share them as I discover them.

I have recently discovered hummus!  It is a healthier alternative for snacking since we love potato chips with sour cream dip.  We have found a selection of crackers at the grocery store that are low in fat and sodium and quite tasty.  Great with hummus!



19-oz. can chickpeas, or 1 cup dried chickpeas that have been soaked and cooked until very tender 
1/2 cup tahini (sesame-seed paste) 
1 clove garlic 
1/3 cup fresh lemon juice 
Kosher salt to taste 
Olive oil for drizzling 
Cayenne for sprinkling 



If using canned chickpeas, drain them, reserving the liquid, and rinse them. If using dried, cooked chickpeas, drain them and reserve 1/2 cup of the cooking liquid.

Purée all the ingredients in a food processor until very smooth, adding the reserved liquid as needed. You should have a medium-thick paste (if it's still too thick, thin it more with water).

Season with salt. Transfer the hummus to a shallow bowl, drizzle with olive oil, and sprinkle with cayenne. Serve with pita bread or raw vegetables.
