Pasta With Roasted Red Peppers and Almonds



Love this fast, delicious and economical pasta meal!  The recipe and photo are courtesy of Real Simple (link after the recipe) . . . one of my favorite websites to find new recipes . . . check it out sometime!

With the cost of groceries rising with every week that passes, The Captain and I were talking about finding recipes that are delicious and stretch the food dollars.

This is one of those recipes!

One thing for sure . . . fresh tomatoes, mushrooms and possibly basil, would be a must when we make this.  Of course other substitutions can be made . . . use what you like, leave out what you don't!  This is the perfect meal for someone with a herb and vegetable garden . . . use what is in your garden.

Seems like this dish would work as a leftover the next day as a cold salad for lunch!  Make extra if this sounds like a good idea for you.

Almonds is an ingredient I have not used in this type of dish in the past, neither are pine nuts, which I am sure would serve as a substitute.  I'm thinking it can be left out all together to stretch those dollars even further.  But then again, I'd love to try something different :)







Ingredients

  • 3/4 pound campanelle or penne 
  • 4 red or orange bell peppers, seeded and cut into quarters 
  • 3/4 cup pitted kalamata olives 
  • 1/2 cup coarsely chopped roasted almonds 
  • 1/4 cup olive oil 
  • 1 tablespoon fresh thyme leaves 
  • kosher salt and black pepper 



Directions

Cook the pasta according to the package directions. Reserve ¼ cup of the cooking water; drain the pasta and return it to the pot. 

Meanwhile, heat broiler. Place the peppers on a baking sheet skin-side up and broil until blackened, 8 to 10 minutes. 

Scrape the charred skin from the peppers with a paring knife and wipe clean with paper towels. Cut the flesh into 1-inch pieces. 

Add the peppers, olives, almonds, oil, thyme, 2 tablespoons of the reserved cooking water, ½ teaspoon salt, and ¼ teaspoon black pepper to the pasta and toss to combine (add more cooking water as needed to loosen the sauce).

Creamy Cheesy Ham Chowder





This creamy and cheesy chowder is great for giving leftover ham new life on the dinner table.

It also makes use of leftover vegetables . . . don't be confined to the vegetables listed on the recipe, use what you have on hand!




TOTAL TIME: Prep: 30 min. Cook: 20 min.
MAKES 10 servings



Ingredients


    • 10 bacon strips, diced
    • 1 large onion, chopped
    • 1 cup diced carrots
    • 3 tablespoons all-purpose flour
    • 3 cups milk
    • 1-1/2 cups water
    • 2-1/2 cups cubed potatoes
    • 1 can (15-1/4 ounces) whole kernel corn, drained
    • 2 teaspoons chicken bouillon granules
    • Pepper to taste
    • 3 cups (12 ounces) shredded cheddar cheese
    • 2 cups cubed fully cooked ham




Directions

In a Dutch oven, cook the bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. In the drippings, saute onion and carrots until tender. Stir in flour until blended. Gradually add milk and water. Bring to a boil; cook and stir for 2 minutes or until thickened.


Add the potatoes, corn, bouillon and pepper. Reduce heat; simmer, uncovered, for 20 minutes or until potatoes are tender. Add cheese and ham; heat until cheese is melted. Stir in bacon.

The Captain's Pork Stew



Who said that leftovers have to be boring?  We had some pork roast left over from our delicious meals of black beans and rice with roast pork.  The Captain made a delicious pork stew out of the leftovers!  I can't tell you how much money we have just thrown down the garbage can until we started coming up with ways to turn one meal into another.  

There are many things you can do with leftover pork roast.  My favorite is to make sandwiches on some good hoagie bread.  How about a pot of any type of beans with the leftover pork thrown in?  I've used them in my famous "Gina's Cuban Style Fried Rice" . . . actually, all types of leftovers end up in that dish!




Ingredients:

1-3 lbs Gina’s Mojo Pork* or your roast pork
1-3 large onions quartered
4-8 medium potatoes cut into bite sized pieces
1-2 heaping tablespoons of minced garlic
½ to 1 12 oz can of tomato sauce
½ to 1 can corn
½ to 1 can peas
Salt
Pepper
2 quarts of water


Directions:

Bring the water to a boil and add the onions, garlic, and potatoes boil for 10 minutes.

Meanwhile slice or shred Gina’s Mojo Pork, keep some of the fat and discard the rest.

Reduce the onions/potato/garlic mixture to a simmer and add Gina’s Mojo Pork. Add just enough tomato sauce to taste. When the stew simmers add salt and pepper to taste.

Occasionally stir the stew. As it cooks it will become long shreds of pork and the sauce will reduce.  When the potatoes have become soft (about 20 minutes), mash them against the side of the pot to break them apart.

Add the corn and peas.  Heat until steaming and serve with biscuits.

  
*The spices used in Gina's Mojo Pork do have an impact on the outcome of the total flavor of the stew.  I highly recommend making the pork for a main meal and using the leftovers for the stew.

Spicy Hot Chicken Legs





I have always loved the taste of Spicy Chicken Wings with the blue cheese sauce, but don't really like chicken wings since they are so bony with little meat and seems to be all skin which totally grosses me out.

Chicken drumsticks are my favorite and I'm thrilled to have found this recipe! Why didn't I think of this?

Another thing I love is that this is a slow cooker recipe . . . throw in all the ingredients, turn it on and walk away!!  Cooking really doesn't get easier and the resulting aroma is an added benefit.

Please note that if you like crispier chicken, bake them in the oven at 400 degrees for the last 30 minutes.







Ingredients

    • 12 chicken drumsticks 
    • 1 (5 ounce) bottle hot red pepper sauce 
    • 1/4 cup butter, cubed 
    • 1/2 teaspoon garlic powder 
    • 1/2 teaspoon onion powder 
    • salt and pepper to taste 
    • 1 1/2 cups blue cheese salad dressing 


Directions


Put the chicken in a slow cooker and top with with pieces of butter.

Add the hot sauce over the chicken.

Season with garlic powder, onion powder, salt and pepper. 

Set slow cooker on high, cover and cook for 3 hours or until tender.


Serve chicken with the blue cheese dressing on the side. 

For crispier chicken, bake in a 400 degrees F oven for the final 30 minutes.

Cornbread Stuffing Chicken Casserole



This is comfort food at its best for me!  It doesn't get easier than the convenience of the "cream of" soups and cornbread stuffing mix for a quick and delicious meal.  This is also a very versatile recipe!

You will keep coming back to this chicken casserole over and over again . . . it is so good!   I make mine  with or without sour cream, but add one more can of my favorite type of "cream of" soup (chicken) if the sour cream is not used.

For some variation, add some steamed broccoli and substitute cream of broccoli soup for the listed soup.  Another variation for mushroom lovers would be cream of mushroom soup with fresh mushrooms.

In my opinion, the cream of celery and cream of chicken makes the best gravy, however, use what you like!  We found that using sour cream makes it even creamier.  Stove Top Stuffing Mix is what I prefer to use.

The prep work for this meal is so easy and a great recipe for a beginning cook who wants great results with little effort or cooking skills.  We used shredded precooked chicken, but it would be just as easy to pull out some frozen chicken tenderloins and quickly pan fry them before putting the casserole together.

The casserole itself is delicious with awesome creaminess, with or without sour cream.  The Captain mentioned that he loved the way the stuffing on the top made an awesome crunchy topping, while some of it blended in with the creamy mixture.  Very nice combination!

This casserole is perfect for pot luck meals!  Try it . . . you'll probably love it!






Ingredients


    • Cooked chicken, cut up in bite sized pieces
    •  (the equivalent of a whole chicken)
    • 8 oz sour cream or another can of "Cream of" soup
    • 1 can Cream of Chicken soup
    • 1 can Cream of Celery soup
    • 1 box cornbread stuffing, uncooked
    • 1 cup chicken broth
    • 1/2 stick melted butter



Directions

Preheat oven to 350.

Place chicken in the bottom of the dish (9 x 13).  


Mix the "cream of" soups and sour cream (if you choose to use the sour cream). Spread over the chicken.

Place the uncooked cornbread stuffing over the soup mixture.  Heat in the microwave . . . the broth and melted butter until butter is melted and pour over all of the casserole.

Bake uncovered at 350° for 30 minutes. Serves approximately 6 - 8.

Garlic Butter Croutons



There are times that I just crave a large salad with ham, cheese, olives, cucumbers and blue cheese dressing.  Salad doesn't have to be a boring bowl of lettuce and tomato!

Although I will settle for crumbled saltine crackers, I love fresh croutons on my salad.  Besides being so much better, making your own croutons is more economical.  Why throw away stale bread when you can make croutons?

With a little effort you can make a salad better than one from a restaurant.  Here's the perfect recipe for crispy, crunchy and flavorful croutons for your salad.  I would toss in a little parsley into the butter mixture for some extra flavor.





  • Ingredients

  • 4 large slices white sandwich bread, cut into 3/4- to 1-inch pieces (about 4 cups)
  • 3 oz. (6 Tbs.) unsalted butter
  • 2 large cloves garlic, smashed and peeled
  • Kosher salt


Directions


Position a rack in the center of the oven and heat the oven to 350°F.

Put the bread cubes on a large rimmed baking sheet. Melt the butter in a 1- to 2-quart sauce pan over medium-low heat. 

Add the garlic, mashing it gently with the back of a wooden spoon, and raise the heat to medium. Cook, stirring occasionally, until the butter is fragrant (the garlic may start to brown around the edges), 3 to 4 minutes. 

Remove from the heat and discard the garlic. 

Drizzle the butter over the bread cubes. Toss with your hands until the cubes are evenly coated. (Don’t worry if some crumble.) 

Spread them in a single layer and sprinkle with 3/4 tsp. salt. Bake until the croutons are a deep golden-brown, 15 to 17 minutes. Let cool completely. 

You can store the croutons in an air-tight container for up to 2 days or freeze for up to 3 weeks.

Chicken Tamale Casserole



Just the mention of tamales takes me back to childhood days and the awesome cooking of my Puerto Rican godmother.  To this day I have not had a tamale as good as hers, but she slaved away for hours making hers from scratch.

This recipe is a blend of tex-mex dishes and better yet, fast and easy preparation since it is semi-homemade.  Although it calls for rotisserie chicken, I'm thinking that leftover pork, chicken or turkey would work just as well, making it more economical.

Yield: serves 6 to 8

Ingredients

    • 1 package (8.5 oz) corn muffin mix (such as Jiffy)
    • 1 can (14.5 oz) cream-style corn
    • 2 eggs, lightly beaten
    • 1/2 cup milk
    • 1 tsp chili powder
    • 1/2 tsp cumin
    • 2 cups shredded taco cheese blend, divided
    • 1 1/2 cups enchilada sauce
    • 3 cups shredded cooked chicken, from rotisserie chicken

    Optional Toppings:

    • diced tomato
    • sour cream
    • shredded lettuce
    • sliced black olives
    • chopped green onions
    • finely chopped cilantro
    • salsa


Instructions

Preheat oven to 400 degrees F. 

Lightly spray a 9x13 inch casserole dish with cooking spray and set aside.

Combine  corn muffin mix, cream-style corn, eggs, milk, chili powder, cumin and 1 cup of cheese in a large bowl.  Stir until ingredients are completely combined.

Pour into casserole dish. 

Bake for 20 minutes.

Remove from oven.

Use a knife to pierce the cornbread mixture several times all over and pour the enchilada sauce over the top of the casserole. 

Sprinkle the top with shredded chicken and remaining cheese. 

Bake  20 minutes.

Remove from oven and let cool for 10 minutes before slicing into pieces and serving with optional toppings.

Citrus Brown Sugar Chicken



If you are stretching your grocery dollars by including more chicken in your menu planning, you can't have enough chicken recipes . . . add this recipe to your collection of chicken entrees!



Ingredients

1 lb boneless skinless chicken thighs or breasts
zest of 1 large orange or 2 medium lemons, about 1 tablespoon zest
juice of 1 large orange or 2 medium lemons, about 1/3 - 1/2 cup total
1 cup flour, I used brown rice flour
1 tablespoon smoked paprika
2 teaspoons kosher salt
1 1/2 tablespoons olive oil
1 tablespoon brown sugar



Directions


Preheat oven to 350. 


Pound the chicken to 1/2" thick.

Combine the flour, paprika and salt in a flat bottomed bowl or pan.

Dredge each piece of chicken in the flour . . . both sides.  Coat well!

Heat the oil over medium high heat in a large flat skillet. 

Brown chicken in the oil for about 2 minutes on each side. 

Remove the chicken and place in a 9x13 baking pan. 

Deglaze the hot skillet with the citrus juice and scrape up all the browned bits.

Pour citrus juice mixture over the chicken and sprinkle with the zest and brown sugar.

Bake for 30 minutes.

Bourbon Chicken



Bourbon chicken is one of my favorite chicken recipes.  Love the simplicity of the tangy sweet flavor served over white rice.

You may want to double the sauce portion of the recipe to make sure you have enough for leftovers the next day! 

The sauce would make the perfect BBQ sauce, the best I have ever had.  It would be perfect over shredded chicken or pork served on a sandwich.  Grilled BBQ chicken basted with this sauce would be awesome!







Directions:

5 chicken breasts (recommend frozen boneless skinless) - cube into bite sized pieces and pan fry in 2 Tbsp olive oil with 1 green pepper and 1/4 cup jarred roasted red pepper (peppers are optional).

Once the chicken is a little browned (after draining the skillet before adding anything else), add a couple spoonfuls of sauce to the browning chicken to caramelize the chicken as it browned.  Add a tiny bit more as the sauce disappears into the chicken and repeat this around 4 times.

Sauce:

Mix and wisk in a separate bowl until well combined:

1 cloves garlic, minced
1/4 cup pineapple juice
1/3 cup brown sugar
2 Tbsp ketchup
1 Tbsp apple cider vinegar
1/2 cup chicken broth
1/3 cup soy sauce
pinch red pepper flakes (adjust to how much heat you prefer)
1 Tbsp cornstarch

Add to the chicken and stir and simmer on low heat, stirring occasionally.

Serve over rice . . . I prefer it over white rice!

Savory Italian Chicken


Love the use of fresh vegetables and italian dressing!

Easy, easy . . . quick prep work utilizing convenience foods for awesome flavoring.  If you haven't used italian dressing in your cooking, you are going to be pleasantly surprised!

Ingredients

8 large chicken breast halves
4 large tomatoes, quartered
1 (8 ounce) package fresh mushrooms
1 (8 ounce) bottle Italian dressing
1 (1 1/4 ounce) package Lipton Onion Soup Mix
1/2 teaspoon oregano leaves, crushed
1 bay leaf

Directions

Place chicken, tomatoes and mushrooms in a 9x13 inch baking dish.

Combine dressing, soup mix, oregano and bay leaves.

Pour sauce over chicken and vegetables and bake 1-1 1/4 hours at 350°F.

Roasted Lemon Chicken with Tomatoes and Potatoes




Lemons seem to be a magical ingredient in cooking chicken.  

The aroma that fills the air while cooking is intoxicating!

This is a quick and easy meal to put together . . . your guests will think you slaved away in the kitchen for hours!  The oven does all the work.  

One of the success secrets of this meal is the use of various herbs and spices mixed in with the lemons and vegetables.  The presentation is awesome!

Ingredients
    • Nonstick cooking spray
    • 4 lbs. (10-12) skin-on, bone-in chicken parts (thighs, legs, wings)
    • 1 lb. baby potatoes
    • 1/2 onion (yellow or red), thinly sliced
    • 2 lemons, 1 sliced and 1 juiced
    • 1/3 cup olive oil
    • 2 garlic cloves, minced
    • 1 teaspoon Italian seasoning
    • 1/2 teaspoon crushed red pepper flakes
    • 1/2 teaspoon paprika
    • 1 1/2 teaspoon kosher salt
    • 1/4 teaspoon freshly cracked black pepper
    • 10 oz. cherry tomatoes

Directions

Preheat oven to 400 degrees F.
Spray a rimmed 13-in. x 9-in. baking dish with cooking spray. Into the baking dish arrange chicken parts (skin side up), potatoes, sliced onion and lemon slices evenly in pan.
In a small bowl, whisk together lemon juice, olive oil, garlic, Italian seasoning, crushed red pepper flakes, paprika, salt and pepper. Pour mixture all over chicken and potatoes. Sprinkle all over generously with additional Italian seasoning, salt and pepper.
Bake uncovered for about 1 hour, or until chicken and potatoes are fully cooked. During last 20 minutes of cooking, add cherry tomatoes and continue cooking for the 20 remaining minutes.
