Chicken Broccoli Rice Casserole

 


Love the combination of chicken and broccoli.   There are many versions of chicken broccoli casseroles.  I have a few posted on this blog, click on the label chicken broccoli casseroles to see them all.

Ingredients

  • 2 cups of diced rotisserie chicken or any other cooked chicken}
  • 2 cups broccoli florets broken down into bite-sized pieces
  • 1 can cream of chicken soup can use low-sodium or Healthy Request
  • 2 cups cooked rice
  • 1 1/2 cups shredded cheese
  • 1/2 cup mayonnaise
  • 1/2-3/4 cup crushed corn flakes
  • 2 tbsp butter melted

Instructions


  • Preheat oven to 350‡F. Combine all ingredients into a greased 9×13 baking dish. I use a 9×13 because we like extra room for our corn flakes {more crunch!} but this recipe will fit into an 8×8 or 9×9 baking dish.
  • Mix up all the ingredients except corn flakes and butter right in the baking dish.
  • Sprinkle the crushed corn flakes over the top of the casserole.
  • Drizzle melted butter over the top.
  • Bake for 30 to 35 minutes or until casserole is heated through.

Notes

Using Frozen Broccoli?

I used fresh broccoli but frozen broccoli but can be substituted as long as you thaw it first.

INGREDIENTS


  • 1/2 cup Hidden Valley® Ranch
  • 45 large russet potatoes, peeled, diced 1/2 inch chunks
  • 1/2 cup hot wing sauce
  • 1/2 cup cream cheese, room temperature
  • 1/2 cup milk
  • 1 stick butter, unsalted, melted
  • 4 cups roasted chicken, skinless, pulled or chopped
  • 3 cups cheddar and jack cheese, grated
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon creole seasoning or seasoned salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • toppings: green onions

INSTRUCTIONS

  1. Preheat oven to 400 degrees.
  2. Peel and boil potatoes for 20 minutes are until tender, drain, set aside.
  3. Mix chicken and hot sauce together and set aside.
  4. Remove skin from chicken and shred or chop chicken.
  5. Add potatoes to a mixer or use hand mixer add 1 1/2 cups of cheese, Hidden Valley® Ranch, and remaining ingredients. Mix well and fold in chicken and hot sauce mixture.
  6. Place potatoes in a 9×9 greased casserole dish.
  7. Top with remaining cheese, bake for 15 minutes.
  8. Garnish with green onions.
  9. Top with extra Hidden Valley® Ranch and enjoy!

Southern Potato Bake

What You'll Need


  • 1 (10-1/2-ounce) can cream of broccoli soup
  • 1 (16-ounce) container sour cream
  • 8 ounces shredded sharp Cheddar cheese
  • 3 tablespoons finely chopped onion
  • 1 stick butter, melted, divided
  • 1 (32-ounce) package frozen southern-style hash browns
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup corn flakes, coarsely crushed

What to Do


  1. Preheat oven to 350 degrees F. Coat an 8-inch square baking dish with cooking spray.
  2. In a large bowl, combine soup, sour cream, cheese, onion, and 1/2 stick butter; mix well. Stir in hash browns, salt, and pepper; pour into baking dish.
  3. In a small bowl, combine corn flakes and remaining butter; mix well. Sprinkle over potatoes.
  4. Bake 55 to 60 minutes, or until heated through and golden brown.

Homemade Spice, Seasoning and Gravy Mixes

 



The cost of everything is getting out of hand.  As a family on a fixed income we are coming up with different things to keep costs down to a minimum.  I don't think we are alone!

A great start is using our own spice, seasoning and gravy mixes.  I'll add to the list as I find articles and videos for a wide variety.

Grilled Pizza with Hot Sausage, Grilled Peppers and Onions and Oregano Ricotta

 




Since we subscribed to Discovery Plus, which I highly recommend, I have watched nothing but my favorite cooking shows.  I'm not fond of what the Food Network has become with all its games, challenges and silly shows . . . but with Discovery Plus, I can enjoy my cooking shows again.

In this episode, Chef Bobby Flay cooks an Italian feast for a group of firemen from the FDNY. He shops and cooks up some hot firehouse favorites, including this grilled pizza.

Ingredients

Basil Vinaigrette:

Directions

  1. Preheat a grill.
  2. Grill the sausage on both sides until golden brown and cooked through, about 10 minutes per side. Brush onions and peppers with the oil and season with salt and pepper. Grill the onions and peppers until soft, about 3 to 4 minutes per side. Remove the sausage from the grill and slice into 1/4-inch thick slices. Remove the onions, separate into rings, and roughly chop. Remove the peppers and slice into 1/8-inch thick slices.
  3. Heat grill to high. Brush dough with olive oil, season with salt and pepper and grill for 2 to 3 minutes or until golden brown. Turn over and grill for 1 to 2 minutes. Remove from the grill and place on a flat surface.
  4. Divide the fontina cheese among the 4 pizza rounds. Divide the sausage, onions and peppers over the cheese. Place the pizza on the grill, close the cover and grill until the cheese has melted, about 3 to 4 minutes. To finish in the oven, preheat the oven to 450 degrees F. Place the pizza on sheet pans and bake until the cheese has melted, about 5 to 10 minutes.
  5. Mix together the ricotta, extra-virgin olive oil, and oregano in a small bowl and season with salt and pepper, to taste. Remove the pizzas from the oven and drizzle with Basil Vinaigrette. Top with dollops of the ricotta cheese mixture and let rest for 5 minutes. Slice and serve.

Basil Vinaigrette:

  1. Combine all ingredients and blend until smooth. Adjust seasoning with salt and pepper, to taste.
