Amaretto Almond Pound Cake




AMARETTO ALMOND POUND CAKE
(recipe and directions for the glaze after the cake)



Ingredients
    • 1 1/4 cups butter, softened 
    • 1 (3-oz.) package cream cheese, softened 
    • 2 1/2 cups sugar 
    • 3 tablespoons almond liqueur
    • 1 tablespoon vanilla extract
    • 2 1/2 cups all-purpose flour
    • 6 large eggs 
    • 1/3 cup sliced almonds



Directions

  1. Preheat oven to 325°. 

  2. Beat butter and cream cheese at medium speed with a heavy-duty electric stand mixer until creamy. 

  3. Gradually add sugar, beating at medium speed until light and fluffy. 

  4. Add liqueur and vanilla, beating just until blended. 

  5. Gradually add flour to butter mixture, beating at low speed just until blended after each addition.

  6. Add eggs, 1 at a time, beating at low speed just until blended after each addition. 

  7. Sprinkle almonds over bottom of a greased and floured 12-cup Bundt pan; pour batter into pan.

  8. Bake at 325° for 1 hour and 5 minutes to 1 hour and 10 minutes or until a long wooden pick inserted in center comes out clean.

  9. During last 10 minutes of baking, prepare Amaretto Glaze. 

  10. Remove cake from oven, and gradually spoon hot Amaretto Glaze over cake in pan. (Continue to spoon glaze over cake until all of glaze is used, allowing it to soak into cake after each addition.) 

  11. Cool completely in pan on a wire rack (about 1 hour and 30 minutes).


AMARETTO GLAZE

Ingredients


    • 3/4 cup sugar
    • 6 tablespoons butter
    • 1/4 cup almond liqueur
    • 2 tablespoons water

Directions

Bring sugar, butter, almond liqueur, and water to a boil in a small 1-qt. saucepan over medium heat, stirring often; reduce heat to medium-low, and boil, stirring constantly, 3 minutes. Remove from heat, and use immediately.

Cherry Cola Cake Recipe


Doesn't this look pretty and delicious?

I love the combination of cherry cola and chocolate!  We have recently discovered Diet Cherry Dr. Pepper, which I think would also work.

This recipe comes from one of my favorite food websites, Taste of Home.  Link follows the recipe!




Ingredients


    • 1-1/2 cups miniature marshmallows
    • 2 cups all-purpose flour
    • 2 cups sugar
    • 1 teaspoon baking soda
    • 1 cup butter, cubed
    • 1 cup cherry-flavored cola
    • 3 tablespoons baking cocoa
    • 2 eggs
    • 1/2 cup buttermilk
    • 1 teaspoon vanilla extract


FROSTING:
    • 3/4 cup butter, softened
    • 1 cup confectioners' sugar
    • 1 jar (7 ounces) marshmallow creme
    • 2 tablespoons frozen cherry-pomegranate juice concentrate, thawed
    • Fresh sweet cherries with stems
Editor's Note: To frost sides as well as top of cake, double amounts for frosting.



Directions


Preheat oven to 350°. 

Line bottoms of two greased 9-in. round baking pans with parchment paper; grease paper. 

Divide marshmallows between pans.

In a large bowl, whisk flour, sugar and baking soda. 

In a small saucepan, combine butter, cola and cocoa; bring just to a boil, stirring occasionally. 

Add to flour mixture, stirring just until moistened.

In a small bowl, whisk eggs, buttermilk and vanilla until blended; add to flour mixture, whisking constantly. 

Pour into prepared pans, dividing batter evenly. (Marshmallows will float to the top.)

Bake 25-30 minutes or until a toothpick inserted in center comes out clean. 

Cool in pans 10 minutes before removing to wire racks; remove paper. Cool completely.

For frosting, in a small bowl, beat butter and confectioners' sugar until smooth. Beat in marshmallow creme and juice concentrate on low speed just until blended.

Place one cake layer on a serving plate; spread top with 1 cup frosting. Top with remaining cake layer; spread with remaining frosting. Decorate with cherries. 

Yield: 12 servings.

Bourbon Peach Cobbler from Tyler Florence


The peaches have been big and juicy and are very inexpensive at this time of the year.

Why not go a step beyond plain peach cobbler and try Tyler Florence's Bourbon Peach Cobbler?

I have not yet made this recipe, but it looks delicious!

Ingredients

    • 8 peaches, peeled and sliced, about 6 to 8 cups
    • 1/4 cup bourbon
    • 3/4 cup sugar, plus more for dusting
    • 2 tablespoons corn starch
    • 1 teaspoon ground cinnamon
    • 1 1/2 cups all-purpose flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon kosher salt
    • 16 tablespoons (2 sticks) cold unsalted butter
    • 3/4 cup heavy cream, plus more for brushing


Directions

Heat the oven to 375 degrees F.

In a large bowl add the peaches, bourbon, 1/4 cup sugar, cornstarch, and cinnamon and mix well to coat the peaches evenly; set aside.

Prepare the dumplings: Into a bowl sift together the flour, 1/2 cup sugar, baking powder, and salt. Cut 12 tablespoons (1 1/2 sticks) butter into small pieces. Add it to the flour mixture and cut it in with a pastry blender or your hands until the mixture looks like coarse bread crumbs. Pour in the cream and mix just until the dough comes together. Don't overwork; the dough should be slightly sticky but manageable.

In a 10-inch cast iron skillet over medium-low heat, melt the remaining 4 tablespoons butter. Add the peaches and cook gently until heated through, about 5 minutes. Drop the dough by tablespoonfuls over the warm peaches. There can be gaps, the dough will puff up and spread out as it bakes. Brush the top with some heavy cream and sprinkle with some sugar; put it into the oven on a baking sheet to catch any drips. 


Cook for 40 to 45 minutes until the top is browned and the fruit is bubbling.

Orange Pineapple Blossoms




Wouldn't these make awesome breakfast muffins?

This recipe comes from Pillsbury's website.  It is one of those semi-homemade recipes that are quick and easy!

I love the combination of orange marmalade and cream cheese . . .







Ingredients:

    • 1 can (12.4 oz) Pillsbury™ refrigerated cinnamon rolls with icing
    • 1/2 cup crushed pineapple (from 8-oz can), well drained on paper towels
    • 1/3 cup SMUCKER'S® Sweet Orange Marmalade
    • 4 oz cream cheese (from 8-oz package), softened


Directions:

Heat oven to 350°F. 

Spray 8 (2 3/4 x1 1/4-inch) muffin cups with CRISCO® Original No-Stick Cooking Spray. 

Separate dough into 8 rolls; set icing aside. Cut each roll into quarters; place 4 quarters, points up and separated slightly, in each muffin cup.

In small bowl, mix pineapple, marmalade and cream cheese. Place 2 tablespoons mixture into center of dough in each cup.

Bake 17 to 22 minutes or until light golden brown. Cool in pan on cooling rack 5 minutes. Run knife around edge of muffin cups; remove rolls from cups and place on serving plate.

Remove cover from icing; microwave on Medium (50%) 10 to 15 seconds or until thin enough to drizzle. 

Drizzle icing over warm rolls. Serve warm.

Crazy Brownies from The Pioneer Woman


The next time I want to make something deliciously sinful and decadent, this is it!!

I was watching The Pioneer Woman this afternoon and I could not believe it when she was putting these brownies together.  All I can say is look at the ingredients list!

Won't these be a big hit on the dessert table at your next party?





Ingredients
  • 1 box Chocolate Cake Mix, 18 To 20 Ounce Box
  • 1/3 cup Evaporated Milk
  • 1 stick Butter, Melted
  • 9 whole Peanut Butter Cups (regular Size, With The Paper Pulled Off)
  • 12 whole Rolo Candies
  • 1/2 cup Finely Chopped Pecans
  • 1/3 cup M&Ms
  • 1/4 teaspoon Salt
  • Powdered Sugar (for Sprinkling)



Instructions

Preheat the oven to 350 F.

Put the dry cake mix in a large bowl and stir in the evaporated milk. (Mixture will still be dry.) Next, pour in the melted butter, stirring gently until the mix just comes together (don't over-mix.)

Divide the mixture in half and press half of it in the bottom of a greased 8 x 8-inch baking pan. Lay the peanut butter cups over the top. Peel the wrappers off of the Rolos and place them in the spaces between the peanut butter cups. Sprinkle nuts into the cracks, followed by M&M's. Finally, sprinkle the salt all over.

Put the other half of the batter on a cutting board and press it into a square a little smaller than the pan. (It will be very sticky.) Transfer it to the pan and lightly press it to cover all the ingredients. Bake for 22 to 25 minutes, or until the batter is fully baked. Allow to cool completely, then place the pan in the fridge, covered in foil, for a couple of hours.

Remove the brownies from the pan in one piece, then sprinkle on plenty of powdered sugar. With a sharp serrated knife, cut into small squares.

Banana Fritters



Sandra Lee always has the easiest recipes that give the illusion of spending a lot of time in the kitchen when it was super fast!

I love having a variety of banana recipes . . . I hate throwing them away when they start to ripen a bit too much.

Ingredients

Fritters:
  • 3 eggs, beaten
  • 3/4 cup milk
  • 1/4 cup brown sugar
  • 3 cups baking mix
  • 3 ripe bananas, diced
  • 2 cups canola oil, for frying

Spiced Glaze:
  • 1 1/2 cups powdered sugar
  • 1 1/2 teaspoons pumpkin pie spice


Directions


For the fritters: In a large bowl, whisk the eggs with the milk and sugar until blended. Stir in the baking mix and bananas until just combined.

Heat the canola oil in a large, heavy-bottomed skillet over medium heat. Using a small ice cream scoop, drop the batter into the skillet. Fry in batches until golden brown and cooked through the center, 2 to 3 minutes per side. Remove from the oil and allow to drain on a wire cooling rack set over a baking sheet.

For the glaze: Whisk together the powdered sugar, 1/4 cup water and pumpkin pie spice.

While the fritters are still warm, pour the glaze over top. Allow the glaze to set up slightly before serving.

Ingredients

The Best Chocolate Sheet Cake:
    • Baking spray, for spraying parchment
    • 2 cups all-purpose flour
    • 2 cups granulated sugar
    • 1/4 teaspoon salt
    • 2 sticks (1 cup) butter
    • 4 heaping tablespoons cocoa
    • 1/2 cup buttermilk
    • 1 teaspoon baking soda
    • 1 teaspoon vanilla
    • 2 eggs, beaten

White Frosting:
    • 5 tablespoons all-purpose flour
    • 1 cup milk
    • 1 teaspoon vanilla
    • 2 sticks (1 cup) butter
    • 1 cup granulated sugar (not powdered sugar!)

Ganache:
    • 3 cups heavy cream
    • 2 teaspoons vanilla
    • 24 ounces semisweet chocolate, broken into pieces
    • 1 jar maraschino cherries


Directions


Special equipment: a 2 1/2-inch biscuit cutter and a frosting (piping) bag and tip

For the best chocolate sheet cake: Preheat the oven to 350 degrees F. Use an 18-by-13-inch sheet cake pan. Cut parchment paper to fit the pan and spray each side with baking spray.

In a mixing bowl, combine the flour, granulated sugar and salt. In a saucepan, melt the butter. Add the cocoa to the butter and stir together. Add 1 cup boiling water to the pan and then allow the mixture to boil for 30 seconds. Pour over the flour mixture, and stir lightly to cool.

Pour the buttermilk into a bowl and add the baking soda, vanilla and beaten eggs. Stir the buttermilk mixture into the butter/flour mixture. Pour into the prepared cake pan and bake for 20 minutes. Let the cake cool completely.

Cut the cooled cake into circles with a 2 1/2-inch biscuit cutter, and then lay the circles on another sheet pan with a wire rack; set this pan in the fridge to make sure there is no warmth to the cake at all. (The frosting is so light and fluffy, the coolness will help keep it all together.)

For the white frosting: In a small saucepan, whisk the flour into the milk and heat, stirring constantly, until it thickens. You want it to be very thick--thicker than cake mix, more like a brownie mix. Remove from the heat and let cool to room temperature. If in a hurry, place the saucepan over ice in the sink for about 10 minutes or so until the mixture cools. It must be completely cool before you use it in the next step. Stir in the vanilla.

While the mixture is cooling, cream the butter and granulated sugar together until light and fluffy. You don't want any sugar graininess left. Then add the completely cooled milk/flour mixture and beat the living daylights out of it. If it looks separated, you haven't beaten it enough! Beat it until it all combines and resembles whipped cream. Grab a spoon and taste this wonderful goodness. If there is any left after your taste test, spread it on a cooled chocolate cake.

For the ganache: Heat the cream until very hot. Add the vanilla, and then pour over the chocolate pieces. Stir to completely melt.

To assemble: Place the white frosting into a frosting bag. Squeeze the frosting onto one circle of cake. Press a second circle on top. Using a ladle, pour ganache over the cake, allowing the chocolate to run over the sides. Place 3 cherries on the center. Repeat the process with each cake. Chill the cakes until ready to serve!

Peanut Butter Pie

Ingredients


    • 1/4 cup milk
    • 1/2 cup chocolate chips
    • One 8-ounce package cream cheese, softened
    • 1/2 cup creamy peanut butter
    • 1 cup powdered sugar
    • 1 cup heavy cream
    • 1 teaspoon vanilla extract
    • One 9-inch graham cracker crust
    • 1/4 cup salted peanuts, roughly chopped



Directions

Heat the milk in a small pot over low heat until warm. Remove from the heat and stir in the chocolate chips until melted and smooth. Set aside to cool slightly; mixture should be thick but have a pourable consistency.

In a large bowl using an electric mixer on high, beat together the cream cheese with the peanut butter and powdered sugar. In a separate bowl, beat together the heavy cream with the vanilla until doubled in volume and soft peaks form.

Stir one-third of the whipped cream into the peanut butter mixture to lighten it. Fold in the remaining whipped cream until combined.

Spread into the graham cracker crust. Pour the melted chocolate over the top of the pie and sprinkle with the chopped peanuts. Place the pie in the freezer to set up, about 1 hour.

Lemon Blueberry Cake



When you are short on time, Sandra Lee's Semi-Homemade recipes are the best!  I just watched this episode on the Food Network and she put this gorgeous cake together really fast.

Gorgeous cake . . . and I can almost taste the wonderful lemon flavors.

Ingredients


    • 2 (8-inch) round store-bought (bakery) yellow or white cake layers
    • 1/3 cup frozen lemonade concentrate, thawed
    • 2 teaspoons lemon extract, divided
    • 2 (12-ounce) cans cream cheese flavored frosting
    • Fresh mint sprigs
    • Fresh blueberries
    • Lemon slices, quartered

Directions

Use a knife to slice cake layers in half horizontally. 

Use a pastry brush to brush each layer with lemonade concentrate; set aside. 

Stir 1 teaspoon of lemon extract into each can of frosting; set aside. 

To assemble cake: frost and stack the cake layers on top of each other.

Decorate cake with clusters of mint sprigs, blueberries, and quartered lemon slices. 


Nutella Bomboloni



These delicious little donuts remind me so much of a pastry my Nana used to make.  The photo takes me back to a special place and time where I can smell the donuts and feel the burn on my tongue since I could not wait for them to cool off!

This recipe comes from a new discovery that I love called the Italy Food Page on Facebook.  Their link follows the recipe.




Ingredients 


    • 2 jars Nutella 
    • 1 lb Ricotta 
    • 1 teaspoon salt 
    • 1 teaspoon vanilla 
    • 4 teaspoons baking powder 
    • 2 cups all purpose flour 
    • 4 eggs 
    • 2 quarts Canola oil 
    • granulated sugar 

To make donuts: In a large mixing bowl, combine 1 jar Nutella, ricotta, salt, vanilla, baking powder, flour and eggs. Mix until smooth to form dough. 

Drop heaping spoonfuls of dough into hot oil at 375° and cook for 3 to 4 minutes. 

Remove donuts from hot oil, drain on paper towels for a moment, roll in granulated sugar, and fill with Nutella. 

Serve immediately!

Oreo Cheesecake



Who doesn't love Oreo cookies?  Oreos and cheesecake are a match made in heaven.  My favorite cheesecake recipe has an Oreo cookie crust . . . actually in my opinion, they make the best crust for cheesecake.

What I love about this recipe are the possibilities to make it lighter by using no fat cream cheese and no fat Cool Whip.  

The recipe and photo comes from the Taste of Home website, although it is officially a Philadelphia Cream Cheese recipe.  If you love cookbooks, Taste of Home has the best annual cookbooks and one of the favorite cookbooks is from Philadelphia Cream Cheese that I have had for more years than I care to mention.




Ingredients
    • 36 OREO® Cookies, divided
    • 1/4 cup butter, melted
    • 4 packages (8 ounces each)PHILADELPHIA® Cream Cheese, softened
    • 3/4 cup sugar
    • 1 teaspoon vanilla extract
    • 1 tub (8 ounces) COOL WHIP® Whipped Topping, thawed

Directions

CHOP 15 cookies coarsely. 

Finely crush remaining cookies; mix with butter. Press onto bottom of 13x9-inch pan. Refrigerate while preparing filling.

BEAT cream cheese, sugar and vanilla in large bowl with mixer until blended. Gently stir in COOL WHIP and chopped cookies; spread onto crust.

REFRIGERATE 4 hours or until firm. Yield: 16 servings.


HOW TO EASILY REMOVE CHEESECAKE FROM A PAN TO SERVE: 
Line pan with foil, with ends of foil extending over sides before using to prepare cheesecake as directed. Use foil handles to lift chilled cheesecake from pan before cutting to serve.

Chocolate Lava Pie



When I saw this pie on The Chew the other day, I have had a craving for it that is unbelievable!  

It is a program I don't often watch out of protest for taking the place of my beloved soap opera All My Children cancelled by ABC, but I happened to be at my mom's house and she watches it religiously.  This pie may have broken the ice for me . . .

The pie reminds me of one of my all time favorite pound cakes that I will have to dig through my personal collection of recipes to find . . . it is called Tunnel of Fudge Cake.  It is part brownie, part pound cake with a fudgy center. Different type of texture than this pie, but the concept is very similar.  I promise to share the pound cake recipe soon!

The only thing missing in that photo is a scoop of vanilla ice cream!

Recipes for pie crust and salted caramel sauce listed separately.








ingredients


    • 1 disc of Perfect Pie Crust
    • 12 ounces Bittersweet Chocolate
    • 1 cup Butter
    • 5 large Eggs (room temperature)
    • 1 cup Sugar
    • 1 tablespoon Vanilla Extract
    • 1/3 cup Flour
    • 1 teaspoon Salt
    • 1/2 cup Semi- Sweet Chocolate Chunks
    • 1/2 cup Chopped Nuts (pecans & walnuts; toasted)
    • Salted Caramel Sauce (to drizzle)



directions

Preheat oven 350°F.

On a lightly floured surface, roll out the dough to 1/8" thickness. Place inside a pie dish and line with parchment and baking beans or weights. Blind bake for 8 minutes. Carefully remove parchment and beans and bake for 4 additional minutes.

Remove from oven and allow to cool.

In a small, heavy bottomed saucepan, melt Chocolate and Butter over low heat. Let Chocolate mixture cool. (Alternatively, Chocolate and Butter may be melted in the microwave. Be careful not to overheat and burn it.)

Using a mixer, whisk Eggs and Sugar until thickened and lemon-colored; blend in Vanilla. Sift Flour and Salt together and fold in; blend in the Chocolate mixture on low speed until thoroughly blended. Fold in the Chocolate chunks.

Pour into the pie crust and bake for 20-25 minutes or until slightly dry on top and slightly jiggly in the center.

Remove from oven and allow to cool for 10 minutes before slicing.

Garnish with toasted nuts and a drizzle of Salted Caramel Sauce (click for recipe) to serve.





Helpful Tips:

1. Blind bake the crust. Blind baking is baking the crust once without the filling. Use wax paper with beans on top to keep the crust from bubbling.

2. Whisk the chocolate together until the butter is fully incorporated.

3. Let the pie rest for 10 minutes and then serve. If making this pie ahead of time, re-warm in the oven or microwave.

Chocolate Chip, Oats and Caramel Cookie Squares



Chocolate and caramel . . . such an awesome combination!

This recipe will satisfy any sweet tooth cravings for sure.

Perfect dessert to take to a party.




Ingredients

1 roll (16.5 oz) Pillsbury® refrigerated chocolate chip cookies
1 cup quick-cooking oats
Dash salt, if desired
2/3 cup caramel ice cream topping
5 tablespoons Pillsbury BEST® all-purpose flour
1 teaspoon vanilla
3/4 cup Fisher® Chef's Naturals® Chopped Walnuts
1 cup Hershey's® semi-sweet baking chips (6 oz)


Directions

Heat oven to 350°F. 

In large bowl, break up cookie dough. 

Stir or knead in oats and salt. 

Reserve 1/2 cup dough for topping. 

In ungreased 9-inch square pan, press remaining dough mixture evenly in bottom to form crust.

Bake 10 to 12 minutes or until dough puffs and appears dry.

In small bowl, mix caramel topping, flour and vanilla until well blended. Sprinkle walnuts and baking chips evenly over crust. Drizzle evenly with caramel mixture. Crumble reserved 1/2 cup dough mixture over caramel.


Bake 20 to 25 minutes longer or until golden brown. 

Cool 10 minutes. 

Run knife around sides of pan to loosen bars. Cool completely, about 1 hour, 30 minutes. 

For bars, cut into 4 rows by 4 rows. Store tightly covered.
