Lemon Chicken with Potatoes

Looks easy, delicious and economical . . . great for a beginner in the kitchen.

What I would change . . . substitute thighs with boneless skinless chicken breasts or tenderloins.

This recipe comes from Pillsbury.

Ingredients

3 tablespoons butter
2 tablespoons packed brown sugar
1 1/2 teaspoons Italian seasoning
1 teaspoon salt
1 package (28 oz) boneless skinless chicken thighs
1 lb baby red potatoes, quartered
1/2 medium yellow onion, cut into large pieces
1 lemon, sliced
1/4 teaspoon pepper

Directions

Heat oven to 400°F.

Spray 13x9-inch (3-quart) baking dish with cooking spray.

Meanwhile, in 10-inch nonstick skillet, melt 2 tablespoons of the butter over medium-high heat.

In small bowl, stir together brown sugar, Italian seasoning and 1/2 teaspoon of the salt. Sprinkle over chicken.

Cook chicken in skillet 3 to 4 minutes on each side or until golden brown and crispy.

Arrange chicken, potatoes, onions and lemon slices in baking dish. Sprinkle with remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Melt remaining 1 tablespoon butter, and drizzle over mixture.

Bake 30 to 40 minutes or until potatoes are tender and juice of chicken is clear when thickest part is cut (at least 165°F).

Rustic Chicken Gratin

This recipe will be an experiment in spices and flavors since I have never used curry and have no idea what it tastes like.  I'm broadening my horizons!

I would make a simple change . . . use fresh vegetables, it is what is preferred. Maybe I'm weird, but I don't usually like the taste of frozen vegetables and prefer fresh.  As far as mushrooms, canned is ok, but I absolutely love fresh mushrooms.

Cheddar cheese?  I will use it the first time, but I'm not convinced this will be as good as it could be with another type of cheese.

Serving Size / Yield
4-6 servings

Ingredients

    • 1 C. butter
    • 1 C. onion, chopped
    • 1 C. flour
    • 1 tsp . salt
    • 1/2 tsp. curry powder
    • 1 (4-oz.) can sliced mushrooms, drained
    • 1 (13-oz.) can evaporated milk
    • 1 (10-oz.) pkg. frozen broccoli spears, drained
    • 3 chicken breasts, chopped
    • 2 C. cheddar cheese, shredded
    • 4 C. white rice, cooked

Directions

Preheat oven at 375 degrees F.

Melt butter in skillet, add onions and saute until tender. Remove skillet from heat.

Stir in flour, salt and curry.

Drain mushrooms. Add water to 1/2 C. mushroom liquid and add to flour mixture in skillet.

Blend in evaporated milk until smooth and add mushrooms.

Cook over medium heat, stirring until sauce thickens.

Spread cooked rice on bottom of 13-by-9-inch baking dish.

Arrange chicken and broccoli over rice.

Pour sauce over mixture and cover with cheese.

Bake for 20 to 25 minutes.

Sweet and Sour Barbequed Chicken

These delicious looking grilled chicken drumsticks come from Kelsey Nixon of  The Cooking Channel.

Love sweet and sour with the added dimension of spicy hot.  Looks like an awesome recipe that reminds me of Bourbon Chicken.

A great addition to your chicken recipe collection :)  I would also use the marinade for pork or seafood.

Ingredients

8 medium chicken drumsticks (about 2 pounds)
1/2 teaspoon kosher salt, plus more for seasoning
Freshly ground black pepper
1 cup apple cider vinegar
1/4 cup vegetable oil
1 to 2 tablespoons Worcestershire sauce
2 cloves garlic, minced
2 sprigs fresh thyme
1/2 cup marmalade
1/4 cup Dijon mustard
2 tablespoons light brown sugar
1/4 teaspoon crushed red pepper flakes

Directions

Sprinkle the chicken with some salt and pepper and let sit for 10 minutes. Transfer to a large resealable plastic bag.

Combine 1/2 cup of the apple cider vinegar, the vegetable oil, Worcestershire sauce, garlic and thyme. Pour the mixture over the chicken, seal the bag. Squeeze out as much air as possible. Place the bag in the refrigerator and allow the chicken to marinate from 2 hours to 8 hours.

Meanwhile, prepare the sauce. Combine remaining cup apple cider vinegar, marmalade, mustard, sugar, salt and crushed red pepper flakes in a medium saucepan over medium-high heat. Bring to a simmer and cook about 10 minutes until the sugar dissolves and the mixture is slightly thickened. Set aside until ready to use.

Prepare an outdoor charcoal grill to medium-high heat.  Placing the coals on one side of the grill for direct and indirect heat.

Remove the chicken from the marinade and pat dry. Grill the chicken on the direct heat until charred on all sides, about 8 minutes per side, turning and basting often. Finish the wings on the indirect heat side until an instant-read thermometer registers 160 degrees F, the wings will be golden and caramelized, about 15 minutes.

Cook's Note: If you are traveling from a prep area to another grilling destination, pack an On the Go Grilling bag. Some suggested items to make the cooking cleaner and easier is to include things like heat-resistant gloves, matches, mini cutting board, salt, pepper towels, tongs, disposable gloves, paper towels, knife, trash bags, newspaper and kitchen shears or scissors.

Mexican Stuffed Chicken Breasts

This chicken really looks yummy.  I can see serving it on a bed of savory mexican rice along with a salad.

Seems like an easy prep, even for a beginner.  I would not change a thing!

This recipe comes from the kitchens of Betty Crocker, always an awesome choice for finding great recipes.

Ingredients

Chicken
1 cup shredded pepper jack cheese (4 oz)
4 oz cream cheese, softened
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 package (1 oz) Old El Paso™ taco seasoning mix
4 boneless skinless chicken breasts (6 to 8 oz each)
2 tablespoons olive oil

Topping
3/4 cup shredded mozzarella cheese (3 oz)
1/4 cup sliced green onions (4 medium)
1/4 cup fresh cilantro leaves

Directions

Heat oven to 400°F.

Line large, rimmed sheet pan with foil.

Place wire rack on top of foil and spray with cooking spray.

Mix pepper jack cheese, cream cheese, chiles and 1 tablespoon of the taco seasoning mix.

Cut 3-inch-long pocket to within 1/4 inch of opposite side of breast on the thick side of each chicken breast

Spoon about 1/3 cup cheese mixture into pocket of each chicken breast. Try to secure chicken up and over stuffing to keep filling from spilling out during cooking. Secure with toothpicks.

Mix remaining taco seasoning mix and the olive oil.

Place chicken on rack and brush with oil mixture.

Roast uncovered 25 to 30 minutes or until stuffing reaches internal temperature of 160°F.

Top chicken breasts with mozzarella cheese.

Bake 3 to 5 minutes or until cheese is melted.

Sprinkle each breast with green onions and cilantro.

Lemon-Rosemary Roasted Chicken Thighs with Potatoes

Baking with rosemary fills the house with a delicious aroma.  I always use rosemary when making a roast chicken and sometimes pork.

First of all, several changes I'd make . . . use boneless chicken tenderloins.  It looks kind of dry and one of the commenters mentioned that she doubles the recipe for the dressing . . . I can see why.  Also, I would dice the potatoes and steam in the microwave for about 5 or 6 minutes before baking in the oven.  It is something I do to ensure crispier potatoes that are always tender and fluffy inside.

This is one of those recipes that is a fairly quick prep and the oven does most of the work!

Recipe and Photo Source:  Rachael Ray

Ingredients

1/4 cup olive oil
2 lemons--1 zested and juiced (about 1 1/2 tsp. zest, 4 tbsp. juice) and 1 thinly sliced
1 tablespoon Dijon mustard
2 cloves garlic, minced
1 1/2 pounds red potatoes, cut into 1-inch cubes
1 1/2 pounds bone-in, skin-on chicken thighs
4 sprigs fresh rosemary

Directions

Preheat the oven to 425 degrees .

Whisk the olive oil, lemon zest and juice, mustard and garlic in a small bowl and season with salt and pepper.

Toss the potatoes, chicken, rosemary and sliced lemon with the dressing in a rimmed baking dish. Season.

Arrange the potato mixture and chicken, skin side up, in a single layer.

Roast, about 35 to 40 minutes, turning the potatoes once, until the potatoes are golden-brown and tender and the chicken is cooked through.

    Grilling/Smoking . . . A Collection of Recipes

There is nothing like the aroma of grilling/smoking meats outdoors.  The Captain and I recently treated ourselves to a grill/smoker since he is a master at smoking meats on the grill.  No gas grill here, we love the taste and aroma of meats prepared on a wood fire.  Since we will be putting our grill/smoker to good use, I have been looking for great grilling/smoking recipes.

For starters, at one of my favorite food blogs, Closet Cooking, Kevin has posted a collection of 25 recipes for the grill.  In particular, the grilled shrimp recipes caught my eye.
