Easy Salted Peanut Chews




Reminds me of one of my favorite candy bars!


Ingredients

    • 1 pouch (1 lb 1.5 oz) Betty Crocker™ peanut butter cookie mix
    • 3 tablespoons vegetable oil
    • 1 tablespoon water
    • 1 egg
    • 3 cups miniature marshmallows
    • 2/3 cup light corn syrup
    • 1/4 cup butter or margarine
    • 2 teaspoons vanilla
    • 1 bag (10 oz) peanut butter chips
    • 2 cups crisp rice cereal
    • 2 cups salted peanuts


Directions

Heat oven to 350°F. 

Spray the bottom of pan (13x9-inch) with cooking spray.

Stir cookie mix, oil, water and egg until soft dough forms in a large bowl

With floured fingers, press dough in pan using.

Bake 12 to 15 minutes or until set.

Sprinkle marshmallows over crust immediately.  Bake 1 to 2 minutes longer, until marshmallows begin to puff up.

Cook corn syrup, butter, vanilla and chips over low heat in 4-quart saucepan stirring constantly until chips are melted. 

Remove from heat; stir in cereal and nuts. Immediately spoon cereal mixture evenly over marshmallows. 

Refrigerate 30 minutes or until firm. 

For bars, cut into 9 rows by 4 rows.




Expert Tips from Betty Crocker


Skip the cooking spray and line pan with foil for quick cleanup and easy bar removal.

For a different flavor, try milk chocolate or semisweet chocolate chips for the peanut butter chips.

The Original Chex Party Mix



This retro recipe conjures up so many memories of parties and get-togethers my parents would have that always included the Chex Party Mix.  Everybody made it for their parties!  Us kids could be found hovering around the bowl :)

I had forgotten about the recipe until I was browsing the Betty Crocker website.  Then it all came back to me and I can't believe I have not made this party mix in all these years!




Ingredients

    • 3 cups Corn Chex™ cereal
    • 3 cups Rice Chex™ cereal
    • 3 cups Wheat Chex™ cereal
    • 1 cup mixed nuts
    • 1 cup bite-size pretzels
    • 1 cup garlic-flavor bite-size bagel chips or regular-size bagel chips, broken into 1-inch pieces
    • 6 tablespoons butter or margarine
    • 2 tablespoons Worcestershire sauce
    • 1 1/2 teaspoons seasoned salt
    • 3/4 teaspoon garlic powder
    • 1/2 teaspoon onion powder


Directions


In large microwavable bowl, mix cereals, nuts, pretzels and bagel chips; set aside. 

In small microwavable bowl, microwave butter uncovered on High about 40 seconds or until melted. Stir in seasonings. Pour over cereal mixture; stir until evenly coated.

Microwave uncovered on High 5 to 6 minutes, thoroughly stirring every 2 minutes. 

Spread on paper towels to cool. 

Store in airtight container.

Berries and Coconut Cream


Berries are always a great choice for desserts or snacks.  

I love this recipe for its simplicity.  The coconut cream sounds delicious
and a great alternative to plain whipped cream

This recipe comes from Real Simple's series Favorite Summer Recipes



Ingredients


    • 2 pounds mixed berries (such as blackberries and raspberries)
    • 2 tablespoons granulated sugar
    • 2 tablespoons fresh lime juice
    • 1 cup heavy cream
    • 1/2 cup cream of coconut (such as Coco Lopez)

Directions


In a large bowl, gently toss the berries, sugar, and lime juice.

With an electric mixer, beat the heavy cream and cream of coconut until soft peaks form. Serve with the berries.

BBQ Roast Beef Nachos



Everything about these nachos sounds good!  They looked good too as Jeff Mauro prepared them on my new favorite cooking show, The Kitchen on The Food Network.  The whole thing came together very quickly with the help of a trip to your local deli.

Ingredients
    • 1 tablespoon vegetable oil
    • 1 pound rare deli roast beef, thinly sliced and julienned
    • 1 cup your favorite BBQ sauce
    • 1 cup shredded sharp Cheddar
    • Tortilla chips
    • 1 cup French-fried onions
    • 1/2 cup pickled cherry peppers, sliced
    • Honey Horseradish Crema, recipe follows


Honey Horseradish Crema:

    • 1/2 cup sour cream
    • 2 tablespoons prepared horseradish
    • 1 teaspoon honey



Directions


Heat the oil in a large nonstick skillet over medium-high heat. Add in the roast beef, stir once and let the meat brown, about 2 minutes, and stir again. Add in the BBQ sauce and simmer for 5 minutes.

Layer the shredded cheese on top of some tortilla chips on a large platter. Pour the piping hot meat over the cheese and then top with the crispy onions, cherry peppers and dollops of the Honey Horseradish Crema.

Honey Horseradish Crema:
Mix the sour cream, horseradish, honey, mustard and salt in a bowl. Let the crema sit for 20 minutes before serving.

Almond Crunch Granola



Since we have been searching for healthy snack substitutes that we will actually enjoy, I was thrilled to find this awesome recipe for granola.  




Description 
This granola is packed with good ingredients, well as vitamin E. It's also low in sodium. Eat a handful or sprinkle it on berries or yogurt.

Notes, Tips & Suggestions 
*To toast almonds: Spread almonds in a single layer in shallow pan. Place in cold oven, toast at 350 ° F, 9-11 minutes, stirring occasionally, until lightly toasted. Cool on counter.





Ingredients
  • 1 cup slivered almonds, toasted*
  • 2 1/2 cups rolled oats (either old-fashioned or quick cooking)
  • 1 cup flaked coconut
  • 3/4 teaspoon cinnamon
  • 1/2 cup honey
  • 1/4 cup almond or vegetable oil
Preparation 
    1. Preheat oven to 350° F. Combine toasted almonds with oats, coconut and cinnamon.
    2. Whisk honey with oil and drizzle over almond-oat mixture, tossing to mix well.
    3. Bake 30 minutes, stirring occasionally. Remove from oven, loosen with spatula and cool.
