Cheesy Chicken Enchiladas

Ingredients

Makes: 4 servings


    • 1 1⁄2 cups cooked rice 
    • 1⁄2 cup shredded grilled chicken breast 
    • 1 cup shredded Monterey Jack cheese, divided 
    • 1 can (10 ounces) enchilada sauce, divided 
    • 1 teaspoon chili seasoning 
    • 2 tablespoons chopped fresh cilantro, divided 
    • 8 corn tortillas, warmed 
    • 1⁄2 cup sour cream (optional), for serving 
    • Salt and pepper 



Directions

Preheat oven to 350°F.

Combine cooked rice, chicken, half the cheese, 2 tablespoons enchilada sauce, chili seasoning, and 1 tablespoon cilantro in a medium bowl.

Cover bottom of a baking dish with a layer of enchilada sauce. 


Distribute rice mixture among 8 tortillas . . . roll up each one. 

Place them seam side down in a single layer in baking dish and top with remaining enchilada sauce and cheese. 

Bake for 15 minutes, until cheese melts.

Remove from oven and top with remaining cilantro and sour cream, if desired. Season to taste. Serve hot.

Chicken Enchiladas

Serves 6

1 (16 oz) can tomatoes
1 (4 oz) can green chile peppers, rinsed and drained
1/2 tsp coriander seed
1/2 tsp salt
1 cup dairy sour cream
2 cups finely chopped cooked chicken or turkey


1 (3 oz) package cream cheese, softened
1/4 cup finely chopped onion
3/4 tsp salt
2 Tbs cooking oil
12 6-inch corn tortillas
1 cup shredded Monterey Jack cheese (4 oz)

Place undrained tomatoes, chile peppers, coriander seed, and the 1/2 tsp salt in blender container. Cover; blend till mixture is smooth. Add sour cream; cover and blend just till combined. Set aside.

Combine chicken or turkey, cream cheese, onion and 3/4 tsp salt.

In skillet heat cooking oil. Dip tortillas, one at a time, into hot oil for 10 seconds or just till limp. Drain on paper towels.

Spoon chicken mixture on tortillas; roll up. Place seam side down in 12 by 7 1/2 by 2 inch baking dish. Pour tomato mixture atop. Cover with foil; bake in 350°F oven about 30 minutes or until heated through. Remove foil; sprinkle with shredded cheese. Return to oven till cheese melts.

Chicken Enchiladas

1 (1 pound) loaf processed cheese food, cubed
1 (16 ounce) container sour cream
2 (10.75 ounce) cans condensed cream of chicken soup
8 fluid ounces evaporated milk
1 teaspoon ground cumin
1 (10 ounce) can chicken chunks, drained
2 cups shredded Cheddar cheese
1 (4 ounce) can chopped green chile peppers
10 (10 inch) flour tortillas


Preheat oven to 350 degrees F (175 degrees C).

In a medium size microwave safe bowl, combine the processed cheese food, sour cream, 1 can of soup, and evaporated milk. Stir together, and heat in microwave oven until smooth, stirring at intervals. Add cumin to taste, and set aside.

In a medium size bowl, combine the chicken, remaining can of soup, shredded cheese, and green chile peppers. Drop spoonfuls of chicken mixture in center of tortillas, and roll up. Place in a lightly greased 9x13 inch baking dish. Pour reserved sour cream mixture over all.

Bake in the preheated oven for 20 minutes

Since I am cooking for one, I would adapt this recipe, taking the concept of ingredients into mind and adjusting the amounts accordingly. My chicken preference . . . frozen tenderloins from the freezer section . . . saute and cut into strips.
