Southern Potato Bake

 


Looks delicious!!

A potato casserole is comfort food at its best.  

Check this one out . . .




What You'll Need


  • 1 (10-1/2-ounce) can cream of broccoli soup
  • 1 (16-ounce) container sour cream
  • 8 ounces shredded sharp Cheddar cheese
  • 3 tablespoons finely chopped onion
  • 1 stick butter, melted, divided
  • 1 (32-ounce) package frozen southern-style hash browns
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup corn flakes, coarsely crushed

What to Do


  1. Preheat oven to 350 degrees F. Coat an 8-inch square baking dish with cooking spray.
  2. In a large bowl, combine soup, sour cream, cheese, onion, and 1/2 stick butter; mix well. Stir in hash browns, salt, and pepper; pour into baking dish.
  3. In a small bowl, combine corn flakes and remaining butter; mix well. Sprinkle over potatoes.
  4. Bake 55 to 60 minutes, or until heated through and golden brown.

If I could only choose one food and only one that I could have every day, day and night, I would choose potatoes . . . my ultimate comfort food.

Yes, I really could make a meal out of just potatoes, especially baked potato topped with chili and cheese.  The possibilities are endless!

Frico with Potatoes and Montasio Cheese





This recipe comes from Lidia on Create TV.  We just watched the program that featured this frico and it looked so delicious that we had to find the recipe.

It is one of those versatile recipes that you can add whatever ingredients your family loves.  I would definitely add mushrooms!






Ingredients


    • 1 medium baking potato, 1/2 pound
    • 2 Tbsp extra virgin olive oil
    • 1 small onion, sliced (1/2 cup)
    • 1/2 cup thinly sliced scallions
    • 1/4 tsp kosher salt
    • Freshly ground black pepper to taste
    • 1/2 pound Montasio Cheese, shredded



Directions

Boil the potato in a pan of gently boiling water until it is easily pierced with a sharp knife, all the way through, but still intact and not mushy. Drain and cool the potato, remove skin, and slice into neat ¼-inch thick rounds.

Pour the olive oil into the skillet and cook on medium heat.  Add the sliced onion and scallions. 

Cook for a minute and scatter the potato rounds in the pan. Toss the potatoes with the onion and scallions and season with salt and black pepper. 

Cook for about 5 minutes, tossing frequently, until the potato rounds are lightly crisped and golden.

Pile the shredded Montasio on top of the vegetables. Slide a metal spatula under some of the potatoes and flip them over, incorporating some of the cheese. Turn all the slices over and over this way, until the cheese shreds are well distributed. With the spatula, clean the sides of the skillet and smooth the vegetables and cheese into a neat pancake-like disk, filling the pan bottom.

Lower the heat and let the frico cook about 5 minutes undisturbed as the cheese melts and crisps, until the bottom is very brown and nicely crusted.

Shake the pan to loosen and put a large plate on top and invert, dropping the frico onto the plate, then slide it back in the skillet, top side down. Cook until the second side is crisp and brown, about 5 minutes more.

Slide the frico onto the plate and blot up excess oil from the cheese with a paper towel. Slice into 6 wedges and serve immediately.

Lemon Chicken with Potatoes



Looks easy, delicious and economical . . . great for a beginner in the kitchen.

What I would change . . . substitute thighs with boneless skinless chicken breasts or tenderloins.

This recipe comes from Pillsbury.






Ingredients

3 tablespoons butter
2 tablespoons packed brown sugar
1 1/2 teaspoons Italian seasoning
1 teaspoon salt
1 package (28 oz) boneless skinless chicken thighs
1 lb baby red potatoes, quartered
1/2 medium yellow onion, cut into large pieces
1 lemon, sliced
1/4 teaspoon pepper


Directions

Heat oven to 400°F. 

Spray 13x9-inch (3-quart) baking dish with cooking spray.

Meanwhile, in 10-inch nonstick skillet, melt 2 tablespoons of the butter over medium-high heat. 

In small bowl, stir together brown sugar, Italian seasoning and 1/2 teaspoon of the salt. Sprinkle over chicken.

Cook chicken in skillet 3 to 4 minutes on each side or until golden brown and crispy.

Arrange chicken, potatoes, onions and lemon slices in baking dish. Sprinkle with remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Melt remaining 1 tablespoon butter, and drizzle over mixture.

Bake 30 to 40 minutes or until potatoes are tender and juice of chicken is clear when thickest part is cut (at least 165°F).

Grilled Three Cheese Potatoes



Those potatoes look delicious!

Love this easy prep recipe that is also versatile.  Change the type of cheese or make additions like fresh mushrooms to suit your family's tastes.

Please note that although this is meant to be cooked on the grill, it can also be baked in the oven.  See note on recipe.





Yield: 6-8 servings


Ingredients


    • 6 large potatoes, sliced 1/4 inch thick
    • 2 medium onions, chopped
    • 1/3 cup grated Parmesan cheese
    • 1 cup (4 ounces) shredded sharp cheddar cheese, divided
    • 1 cup (4 ounces) shredded part-skim mozzarella cheese, divided
    • 1 pound sliced bacon, cooked and crumbled
    • 1/4 cup butter, cubed
    • 1 tablespoon minced chives
    • 1 to 2 teaspoons seasoned salt
    • 1/2 teaspoon pepper



Directions

Divide the potatoes and onions equally between two pieces of heavy-duty foil (about 18 in. square) coated with cooking spray.

Combine Parmesan cheese, 3/4 cup each cheddar and mozzarella.  

Sprinkle cheeses over potatoes and onions. Top with bacon, butter, chives, seasoned salt and pepper. 

Bring opposite ends of foil together over filling and fold down several times. Fold unsealed ends toward filling and crimp tightly.

Grill, covered, over medium heat for 35-40 minutes or until potatoes are tender. Remove from the grill. 

Open foil and sprinkle with remaining cheeses.

Can also be cooked it in the oven at 350° for an hour.

Chive and Onion Hash Browns



This hash brown casserole sounds and looks seriously delicious!




Ingredients

1-1/2 cups half-and-half cream
1 container (8 ounces) spreadable chive and onion cream cheese
2 tablespoons dried minced onion
1 teaspoon salt
1/2 teaspoon pepper
2 packages (20 ounces each) refrigerated shredded hash brown potatoes
2 cups shredded Swiss cheese
3 tablespoons minced fresh chives, divided
2 tablespoons butter, cubed



Directions

Preheat oven to 375°. 

Combine the first five ingredients in a Dutch oven, cook and stir over medium heat until blended. Stir in potatoes.

Grease a 13x9-in. or 3-qt. baking dish.  

Layer 1/3 of the hash brown mixture and 2/3 cup Swiss cheese and sprinkle with 1 tablespoon chives. Repeat layers. 

Top with remaining hash brown mixture and cheese; dot with butter.
Bake, covered for 35 minutes. 

Bake, uncovered for 10-20 minutes longer or until edges begin to brown and potatoes are heated through. 

Let stand 10 minutes before serving. Sprinkle with remaining chives. 


Yield: 12 servings (3/4 cup each)

Lemon-Rosemary Roasted Chicken Thighs with Potatoes



Baking with rosemary fills the house with a delicious aroma.  I always use rosemary when making a roast chicken and sometimes pork.

First of all, several changes I'd make . . . use boneless chicken tenderloins.  It looks kind of dry and one of the commenters mentioned that she doubles the recipe for the dressing . . . I can see why.  Also, I would dice the potatoes and steam in the microwave for about 5 or 6 minutes before baking in the oven.  It is something I do to ensure crispier potatoes that are always tender and fluffy inside.

This is one of those recipes that is a fairly quick prep and the oven does most of the work!

Ingredients

1/4 cup olive oil
2 lemons--1 zested and juiced (about 1 1/2 tsp. zest, 4 tbsp. juice) and 1 thinly sliced
1 tablespoon Dijon mustard
2 cloves garlic, minced
1 1/2 pounds red potatoes, cut into 1-inch cubes
1 1/2 pounds bone-in, skin-on chicken thighs
4 sprigs fresh rosemary


Directions

Preheat the oven to 425 degrees . 

Whisk the olive oil, lemon zest and juice, mustard and garlic in a small bowl and season with salt and pepper.

Toss the potatoes, chicken, rosemary and sliced lemon with the dressing in a rimmed baking dish. Season. 

Arrange the potato mixture and chicken, skin side up, in a single layer.

Roast, about 35 to 40 minutes, turning the potatoes once, until the potatoes are golden-brown and tender and the chicken is cooked through.

Twice Baked Potatoes from The Pioneer Woman


I could make a whole meal out of baked potatoes . . . and even better . . . twice baked potatoes!

This recipe comes from The Pioneer Woman, Ree Drummond of The Food Network, so you know it has got to be delicious!

For different variations, change the type of cheese or try combination of cheeses.

They also make great snacks straight from the fridge or pop in the microwave.






Ingredients

8 baking potatoes, washed
3 tablespoons canola oil
2 sticks salted butter (sliced into pats)
1 cup bacon bits (fry your own!)
1 cup sour cream
1 cup Cheddar or Jack cheese (or a mix of both), plus more for topping
1/2 cup whole milk
2 teaspoons seasoned salt
3 green onions, sliced
Freshly ground black pepper



Directions

Preheat the oven to 400 degrees F.

Rub the potatoes with canola oil (I like to use softened butter and sprinkle with kosher salt) and bake for 1 hour on a cookie sheet.  Make sure they are sufficiently cooked through.

Place butter in a large mixing bowl along with the bacon bits and sour cream.

Remove the potatoes from the oven and lower the heat to 350 degrees F.

Cut each potato in half (lengthwise). 

Carefully scrape out the insides into the mixing bowl, make sure not to tear the shell.  Leave a small rim of potato for support. Lay the potato shells on a baking sheet.

Mash the potatoes into the butter, bacon and sour cream; add cheese, milk, seasoned salt, green onions and black pepper to taste . . . mix together well. (IMPORTANT: If you plan to freeze the twice-baked potatoes, do NOT add the green onions.)

Heap the potato shells with the filling.  Add a little more grated cheese on top of the potatoes and bake another 15 to 20 minutes until the potatoes are warmed through.

Mama's Baked French Fries by Trishia Yearwood



I've been thinking about these french fries since I saw Trishia Yearwood prepare this dish on the Food Network.  They are healthier than deep fried french fries, full of flavor and I love the crispiness of the fries.

Ingredients

    • Cooking spray, for the baking sheet
    • 3 pounds Russet potatoes (about 8 small or 6 medium), sliced into 1/2-inch-thick slices, then again into 1/2-inch-thick French fries
    • 1/4 cup extra-virgin olive oil
    • 2/3 cup grated Parmesan
    • 1/4 cup finely chopped fresh parsley
    • 1 teaspoon salt, plus more for sprinkling
    • 1/2 teaspoon freshly ground pepper, plus more for sprinkling
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon cayenne pepper

Directions
Preheat the oven to 400 degrees F. Coat a large, rimmed baking sheet with cooking spray.

In a large bowl, combine the potatoes and olive oil and toss to coat. In a medium bowl, mix together the Parmesan, parsley, salt, pepper, garlic powder and cayenne until fully combined.

Sprinkle the parsley mixture on the potatoes and gently toss to evenly coat. Transfer to the prepared baking sheet and bake the potatoes, flipping them with a spatula every 10 minutes to prevent sticking, until golden brown, about 45 minutes. Season with salt and pepper to taste. Serve hot.

Potato Casserole by Trisha Yearwood



Trisha describes this side dish as a mashed potato casserole.

Doesn't it look delicious?

Sometimes the simplest of meals are the best.

I'd never heard of mayonnaise and sour cream together for mashed potatoes, but why not?




Yield: 6 to 8 servings
Level: Easy

Total Time: 45 min

Prep: 15 min
Cook: 30 min



Ingredients


    • Nonstick cooking spray, for greasing the baking dish
    • 6 large russet potatoes
    • Pinch salt
    • 8 ounces sliced bacon
    • 1 cup milk
    • 1/2 cup mayonnaise
    • 1/2 cup sour cream
    • 1/4 cup (1/2 stick) unsalted butter
    • Pinch garlic salt
    • Pinch freshly ground black pepper
    • 2 cups grated Cheddar




Directions

Preheat the oven to 400 degrees F. Grease a 2-quart baking dish with cooking spray.

Peel the potatoes and cut them into 1-inch cubes. Place the potatoes and salt in a pressure cooker with water to cover and bring to a boil. Reduce the heat and simmer the potatoes until very tender, about 5 minutes. (If you do not have a pressure cooker, boil the potatoes in a pot of water with a pinch of salt until tender, about 20 minutes.)

While the potatoes boil, cook the bacon in a medium skillet over medium heat until browned and cooked through, 8 to 10 minutes. Drain the bacon on paper towels and, when cool enough to handle, crumble it into small pieces. Set aside.

Add the milk, mayonnaise, sour cream, butter, garlic salt, pepper and 1 cup of the cheese to a stand mixer with a paddle attachment. Whip the mixture until thoroughly combined. Drain the potatoes and add to the mixer. Mix again to combine and the potatoes are whipped smooth.

Spoon the mixture into the prepared baking dish. Sprinkle the crumbled bacon and remaining 1 cup cheese over the top and bake until the cheese is melted and the casserole is heated through, about 20 minutes.

Olive Potatoes

French cooking is something I'm not familiar with.  Probably because I don't have much of an interest since my trip to France and my dislike of the food, except for the awesome pastries.  I was surrounded by unfamiliar food arranged by a tour group.  I'll never forget my disgust when a plate of escargot was placed in front of me and I had no idea what was before me.  I immediately lost my appetite when I asked "what is escargot" and found out they were snails.  I lived on coffee, pastries and fruit while in Paris.

Anyway, I ran across the show French Food at Home on The Cooking Channel and have watched it several times with a bit of apprehension.  I'm surprised to say that I have seen several meals prepared that I would love to try out.  The Olive Potatoes is a side dish that I want to try for sure.

As I have "matured" my mind is more open to different foods from all cultures.







INGREDIENTS



    • 1/2 cup/ 125 ml olive oil
    • 2 pounds/1 kg red waxy potatoes
    • 4 medium onions, sliced
    • 8 cloves garlic, unpeeled
    • Kosher salt and freshly ground black pepper
    • 2 to 4 fresh thyme sprigs
    • 1/2 cup/50 g black olives, pitted
    • 1/2 cup/50 g green olives, pitted
    • 1/2 cup/60 g pine nuts
    • A handful of shredded fresh basil


DIRECTIONS

Heat the olive oil in a large saute pan until quite hot. Add the potatoes, onions and garlic; stirring to coat. Sprinkle with salt and pepper and add the thyme sprigs. Cook uncovered, stirring occasionally, until the onions are soft and the potatoes tender and golden, about 30 minutes.

Then toss in the olives and pine nuts, stirring to warm them. Check the seasonings, toss in the basil and serve.

Potatoes au Gratin from The Pioneer Woman



This recipe comes from The Pioneer Woman who effortlessly brings us delicious recipes every week on the Food Network.  I love her cooking style and try not to miss her shows.

I must admit that I don't often make potatoes au gratin or scalloped potatoes from scratch . . . I really love those that come out of the box, which is very unusual for me.  However, I love them made from scratch so much more and plan on not being so lazy and toss the box mix.


Ingredients

  • 4 whole Russet Potatoes, Scrubbed Clean
  • 2 Tablespoons Butter, Softened
  • 1-1/2 cup Heavy Cream
  • 1/2 cup Whole Milk
  • 2 Tablespoons Flour
  • 4 cloves Garlic, Finely Minced
  • 1 teaspoon Salt
  •  Freshly Ground Pepper, to taste
  • 1 cup Sharp Cheddar Cheese, Freshly Grated

Preparation Instructions

Preheat oven to 400 degrees.
Smear softened butter all over the bottom of a baking dish.
Slice potatoes, then cut slices into fourths.
In a separate bowl, whisk together cream, milk, flour, minced garlic, salt, and plenty of freshly ground black pepper.
Place 1/3 of the potatoes in the bottom of the baking dish. Pour 1/3 of the cream mixture over the potatoes.
Repeat this two more times, ending with the cream mixture. Cover with foil and bake for 30 minutes. Remove foil and bake for 20 minutes, or until potatoes are golden brown and really bubbling. Add grated cheese to the top of the potatoes and bake for 3 to 5 more minutes, until cheese is melted and bubbly.
Allow to stand for a few minutes before serving by the spoonful. Delicious!

Buffalo Chicken and Roasted Potatoes Casserole




Another awesome chicken recipe!  It seems like since I started the chicken theme a while back, I can't stop myself . . . we love chicken . . . and I still have lots of family recipes that just need photos . . . and those that are in my filing cabinets full of newspaper and magazine clippings.  I always say you can never have enough chicken recipes!

Anyway . . . I love the flavors of buffalo chicken wings, but I just don't like wings.  So I have been on a mission to find recipes that are similar.  

This recipe is a combination of buffalo chicken wings and baked potatoes in a cheesy casserole . . . YUMMY!!!  This is a keeper for sure!!

Just a note about potatoes . . . I have adopted a new way of preparing potatoes. No matter how they will be used in the meal, I cook them partially in the microwave.  I really hate to bite into a potato that is not completely done and they take forever to cook thoroughly.  For this meal, we cubed the potatoes and cooked them in the microwave in a steamer type of container for 2 minutes. Seems to me they soak up the sauce a little better before going into the oven.  






Makes 10 servings



Ingredients

    • cooking spray
    • 3-6 tablespoons hot pepper sauce (depending on your heat preference)
    • 1/3 cup olive oil
    • 2 tablespoons garlic powder
    • 1/2 teaspoon cayenne pepper (use less depending on your heat preference)
    • 1 tablespoon paprika
    • 1 1/2 teaspoons salt
    • 8 potatoes, cut into 1/2-inch cubes
    • 2 pounds skinless, boneless chicken breast halves, cut into 1/2-inch cubes
    • 3 cups shredded Mexican cheese blend
    • 1 cup diced green onions
    • Blue cheese dressing for dipping sauce



Directions

Preheat oven to 500 degrees F (260 degrees C). Spray a 9x13-inch baking dish with cooking spray.


Heat hot pepper sauce, olive oil, garlic powder, cayenne pepper, paprika, and salt in a large skillet over low heat, stirring until thoroughly combined. Turn off heat. 

Toss potatoes in the hot pepper sauce mixture to coat, using a slotted spoon to transfer the potatoes to the prepared baking dish. 

Leave remaining sauce in skillet. Mix chicken into remaining sauce and allow to marinate while potatoes roast.

Bake potatoes until tender inside and crisp and brown outside, 45 to 50 minutes, stirring every 10 to 15 minutes.

Reduce oven heat to 400 degrees F (205 degrees C).

Spread chicken cubes over roasted potatoes followed with the cheese and green onions over the chicken. 

Return to oven and bake until chicken is cooked through and the cheese topping is bubbling, about 15 minutes.

Cajun Fries


Love the seasoning and the idea of baked fries.

We love spicy cajun food and I'm sure this will be a regular on our menu.




Ingredients:

4 medium potatoes
1/4 teaspoon oregano
1/4 teaspoon thyme
1 teaspoon paprika
1/8 teaspoon cayenne (or to taste)
1/8 teaspoon black pepper
1/4 teaspoon sugar
1/4 teaspoon cumin
1/2 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon Tabasco sauce
1 tablespoon vegetable oil



Directions:


Preheat oven to 400 degrees F.

In a small bowl, combine oregano, thyme, paprika, cayenne, black pepper, sugar, cumin, salt, garlic powder, onion powder, Tabasco sauce, and oil; mix well into a paste.

Line a large baking sheet with aluminum foil; pour a small amount of oil onto foil and spread with a paper towel.

Peel potatoes and slice into french fry shapes.

Place fries in a plastic bag with paste and work paste onto fries; alternatively you can do this in a bowl, but the bag method is easier.

Place fries on lined baking sheet, trying not to let edges touch.

Bake in preheated oven for approximately 30-35 minutes (your time may vary with the size fry you cut); turn once during cooking to brown underside.
