Slow Cooker Garlic Chicken



Love this type of recipe where you can throw everything together and forget about it, leaving a delicious aroma as it cooks.

Many who reviewed this recipe were concerned about the lack of liquid and added chicken broth or salad dressing.  I would agree that adding a little chicken broth isn't a bad idea . . . neither is adding more onion and some fresh chunky sliced mushrooms. 

During the end step in the oven (I would use a normal oven temperature like 350 instead of broiling), I would take some of the juices and make a gravy.  I'd also use boneless skinless chicken breasts or tenderloins which is my personal preference.  Use what you like and adjust the recipe accordingly.  

This recipe, from the Betty Crocker website, would be a great one for a beginner cook to try out and impress your guests who will think you worked in the kitchen cooking for hours.






Ingredients

1 large onion, halved, cut into thin slices 

1 tablespoon chopped garlic
1 1/2 teaspoons dried thyme leaves
1 teaspoon dried basil leaves
1 teaspoon dried oregano leaves
1 teaspoon salt
1/2 teaspoon pepper
1 cut-up whole chicken (3 1/2 to 4 lb)



Directions
Spray 5- to 6-quart slow cooker with cooking spray and place onion and garlic in slow cooker.
Mix thyme, basil, oregano, salt and pepper in a small bowl and rub each piece of chicken with the herb mixture. 

Arrange chicken pieces over onion and garlic.
Cover and cook on High heat setting 3 hours 30 minutes (or Low heat setting 6 to 7 hours) or until juice of chicken is clear when thickest pieces are cut to bone (at least 165°F).
Set oven control to broil and line broiler pan or cookie sheet with foil.  Place chicken skin side up on pan. 

Broil with tops 6 inches from heat 4 to 6 minutes or until golden brown.

Slow Cooker Garlic Chicken



Doesn't that chicken look awesome?  Reminds me of the yummy rotisserie chicken we buy at the grocery store.

How can you go wrong with 40 garlic cloves, white wine and cognac cooked in the slow cooker until it is about to fall off the bone?  I look forward to making this chicken!

Ingredients
    • 1/2 cup reduced-sodium chicken broth 
    • 3 tablespoons dry white wine 
    • 2 tablespoons cognac 
    • 1 1/2 teaspoons extra-virgin olive oil 
    • 1 1/2 teaspoons butter 
    • 1 whole chicken (3 to 3 1/2 lb), skin removed, cut into 8 pieces 
    • 1/4 teaspoon salt 
    • 1/8 teaspoon freshly ground pepper 
    • 40 cloves garlic (about 4 whole heads), peeled 
    • 2 teaspoons fresh thyme leaves 
    • 4 teaspoons chopped fresh parsley, if desired



Directions

Spray 4-quart slow cooker with cooking spray. In small bowl, stir broth, wine and cognac; set aside. 

In 12-inch nonstick skillet, heat oil and butter over medium-high heat. 


Sprinkle chicken pieces evenly with salt and pepper. Add to skillet; cook 5 minutes, turning once, until golden. Place chicken in slow cooker.

Add garlic to drippings in skillet; cook over medium heat 1 minute, stirring constantly, until garlic begins to brown. 

Stir in broth mixture, scraping skillet to loosen brown particles. Boil 2 minutes or until sauce is reduced to about 1 cup. 

Pour sauce over chicken. Sprinkle with thyme.

Cover; cook on Low heat setting 4 hours or until juice of chicken is clear when thickest pieces are cut to bone (at least 165°F). Garnish with parsley.

Spicy Hot Chicken Legs





I have always loved the taste of Spicy Chicken Wings with the blue cheese sauce, but don't really like chicken wings since they are so bony with little meat and seems to be all skin which totally grosses me out.

Chicken drumsticks are my favorite and I'm thrilled to have found this recipe! Why didn't I think of this?

Another thing I love is that this is a slow cooker recipe . . . throw in all the ingredients, turn it on and walk away!!  Cooking really doesn't get easier and the resulting aroma is an added benefit.

Please note that if you like crispier chicken, bake them in the oven at 400 degrees for the last 30 minutes.







Ingredients

    • 12 chicken drumsticks 
    • 1 (5 ounce) bottle hot red pepper sauce 
    • 1/4 cup butter, cubed 
    • 1/2 teaspoon garlic powder 
    • 1/2 teaspoon onion powder 
    • salt and pepper to taste 
    • 1 1/2 cups blue cheese salad dressing 


Directions


Put the chicken in a slow cooker and top with with pieces of butter.

Add the hot sauce over the chicken.

Season with garlic powder, onion powder, salt and pepper. 

Set slow cooker on high, cover and cook for 3 hours or until tender.


Serve chicken with the blue cheese dressing on the side. 

For crispier chicken, bake in a 400 degrees F oven for the final 30 minutes.

Honey Garlic Chicken


There is nothing like the aroma of a meal cooking in the crock pot.  In my working days, I walked in the door from a hard day's work to the smell of a delicious meal ready to eat.  Be instantly de-stressed!  The source of this recipe and photo is dedicated to slow cooking . . . check it out.

How about the combination of honey and garlic?  It is one of my favorite appetizers when I order Chinese takeout.  This chicken dish would be perfect with rice, steamed broccoli and a salad with rolls.

This year, I'm focusing on frugal cooking . . . lots of chicken.  Another focus that goes along with frugal cooking is freezer cooking.  This meal would be perfect for two meals for two people . . . freeze half to enjoy another day later in the month!  I love having a great selection of meals ready to go in the freezer for those busy or lazy days.

Ingredients


    • 1  1/2 to 2 pounds boneless, skinless chicken thighs 
    • 3 garlic cloves, smashed and chopped
    • 1 teaspoon dried basil
    • 1/2 cup soy sauce 
    • 1/2 cup ketchup
    • 1/3 cup honey


Directions

Use a 4-quart slow cooker (if using a 6-quart, this will cook faster.  Check after 3 hours on high, 5 hours on low).


Put the chicken into your cooker. In a small bowl, combine the rest of the ingredients, then pour evenly over the top.

Cook on low for 6 hours or high for 3-4 hours.
