Quick and Easy Cherry Cobbler



It doesn't get any easier than this Cherry Cobbler recipe from Betty Crocker. OK, I guess you could use canned biscuits, but other than that . . . easy enough for a beginner!

Let me deviate from the recipe for a minute and discuss the concept of semi-homemade, using convenience foods in meal preparation.  

A comment from a disgruntled reader brought this discussion to a food website comment board making advocates of semi-homemade cooking seem lazy and uncaring about their family by fixing a meal using these shortcut tricks.  

You know, there is a time and place for everything!  

I am an advocate of both styles of cooking.  While I can make the best "from scratch" biscuits using the same recipe I've used since junior high school home ec class, there are times I want quick and easy.  That is why I always have a box of Bisquick on hand.  The Captain and I have recently added canned fruit filling, puff pastry sheets and OMG . . . jarred spaghetti sauce to our pantry for those times.  If I really think about it, we probably stock many other convenience foods . . . oh yeah, chicken stock!

There have been times that I've spent hours in the kitchen making a spaghetti sauce using tomatoes, peppers and herbs from my garden.  No convenience there!  It is all about the time you have on your hands.

In my working days, I wanted quick and easy semi-homemade meals since after a day at the office, I didn't want to spend hours in the kitchen.  A good meal and time to unwind is what I wanted.  On the weekends, I would go crazy cooking and many times making and freezing extra food for during the week. It is all about choice!

She probably thinks that using a slow cooker is also evil . . .

OK, rant over . . . the woman's comments really upset me!

So . . . having said all that . . . you can change up this recipe by using a different canned fruit like apple.  If it makes you feel better to make your scratch biscuits, knock yourself out!  It is a guide . . .

Ingredients

1 can (21 ounces) cherry pie filling
1 cup Original Bisquick™ mix
1/4 cup milk 
1 tablespoon sugar
1 tablespoon butter or margarine, softened


Directions

Spread pie filling in ungreased 1 1/2-quart casserole. Place in cold oven and heat to 400ºF and let heat 10 minutes. Remove pan from oven.

While pie filling is heating . . . stir remaining ingredients until soft dough forms. Drop by spoonfuls onto warm pie filling. Sprinkle with additional sugar.

Bake for 18 to 20 minutes or until topping is light brown.

Broccoli, Cheese and Ham Muffins


These muffins are O.M.G. delicious looking!  I can almost guarantee that these are going to be a regular part of our menu once we try them.  I'm already thinking about variations using breakfast sausage, sliced up little smokies, bacon.  Of course I would prefer fresh broccoli!

Vegetarians can easily convert it into a vegetarian meal by leaving out the meat.

They come together quick and easy, thanks in part to the use of Bisquick.  I'm a huge advocate of Bisquick, although I love to cook from scratch.  I am NEVER without a box or two in my pantry.  Why go through more work if  you don't have to?  I use convenience foods as much as I can as long as they are high quality and economical.  I'm not being paid to say this . . . just a big fan of the product :)  

I'm very anxious to try this recipe!





Ingredients

    • 1 bag (12 oz) Green Giant™ Steamers™ frozen broccoli & cheese sauce
    • 1 1/2 cups Original Bisquick® mix
    • 1/2 cup milk
    • 3 tablespoons vegetable oil
    • 1 egg
    • 1/2 cup diced cooked ham
    • 1/2 cup shredded sharp Cheddar cheese (2 oz)


Directions

Heat oven to 400°F. Spray 12 regular-size muffin cups with cooking spray.


Cook broccoli as directed on bag.

In large bowl, stir together Bisquick mix, milk, oil and egg. Stir in broccoli, ham and cheese just until well mixed. Spoon mixture evenly into muffin cups.

Bake 18 to 22 minutes or until golden brown. Cool 5 minutes; remove from pan. Serve warm.



Expert Tips

Wrap and refrigerate any leftover muffins. Unwrap and reheat 1 at a time on microwavable plate 15 to 30 seconds or until warm.

Ham and Cheddar Torta


Very impressive looking torta that would be a great choice for any meal!

I would vary the ingredients depending on the meal.  For example, my breakfast torta would not include beans and broccoli.  However, I would include fresh mushrooms, and maybe two more eggs.  Seems worthy of experimentation!

The beans and italian dressing sounds a little funky, but may turn out to be one of my favorite new recipes, so I am going to try it at least once.  Seems like a hearty lunch or dinner meal that can also be varied to include chicken instead of ham or vary the vegetables.

Love the idea of baking it in a springform pan!






Ingredients

    • 1 1/3 cups Original Bisquick® mix
    • 1 can (15 oz) Progresso® cannellini beans, drained, rinsed and mashed
    • 1/3 cup Italian dressing
    • 1 1/2 cups diced cooked ham
    • 1 box (9 oz) Green Giant® frozen cut broccoli, thawed, drained
    • 1 cup shredded Cheddar cheese 
    • (4 oz) 1 cup milk
    • 2 tablespoons Original Bisquick® mix 3 eggs, slightly beaten



Directions

Heat oven to 375°F. In small bowl, stir together 1 1/3 cups Bisquick mix, the beans and dressing. Spread in bottom and 2 inches up side of ungreased 9x3-inch springform pan. Bake 10 to 12 minutes or until set.


Layer ham, broccoli and cheese over crust. In small bowl, stir milk, 2 tablespoons Bisquick mix and the eggs until blended; pour over cheese.

Bake 55 to 60 minutes or until golden brown and knife inserted near center comes out clean. Let stand 10 minutes. Loosen edge of torta from side of pan; remove side of pan.



Expert Tips

Bake the crust the day before and store covered in the refrigerator. Or make the torta completely the day before, store covered in the refrigerator and reheat loosely covered in 375°F oven 15 to 20 minutes or until hot.

Southern Sausage Balls



1 lb. hot sausage (Jimmy Dean breakfast sausage)
3 cups of Bisquick
1 cup water
12 ounces sharp shredded cheese

 
Mix all ingredients blending well…….use your hands……
Roll into small balls and bake 350 degrees for 15 minutes


Makes about 4 dozen balls


This recipe has been a part of our family
parties  for as long as I can remember.

Banana Coconut Cream Dessert


This recipe is begging for me to try.

It is one of those quick and easy desserts
you can control ingredients to make lower fat.

Looks yummy . . . will comment when I try it out.

By the way, keep an extra box of Bisquick around!


2 cups Original Bisquick® mix
2 tablespoons sugar
1/4 cup firm butter or margarine
1 package (4-serving size) vanilla instant pudding and pie filling mix
1 3/4 cups milk
2 medium bananas, sliced
2 cups whipped cream
1/2 cup toasted shredded coconut


1. Heat oven to 375°F. Mix Bisquick mix and sugar in medium bowl. Cut in butter, using pastry blender or crisscrossing 2 knives, until crumbly. Press in bottom of ungreased square pan, 9x9x2 inches.

2. Bake about 15 minutes or until light brown. Cool completely, about 30 minutes.

3. Make pudding mix as directed on package for pudding, using 1 3/4 cups milk; spread over crust. Top with banana slices. Spread whipped cream over top. Sprinkle with coconut. Cover and refrigerate at least 1 hour but no longer than 24 hours.


High Altitude (3500-6500 ft) No changes.
